I ran yesterday morning, then chowed down on breakfast. I snacked on these while my eggs cooked. Superhero Muffin from Run Fast. Eat Slow. and bacon.

The clouds were beautiful on my run! I think clouds are beautiful. I love getting to run when the sun is up, friends!

This is my last build week! I’m excited to see how I feel once I start doing some harder runs. I know the first few weeks back I still need to be careful – I won’t ramp up mileage or effort too quickly. I need to ease back into everything at this point. But I’m still excited!

I did 4 miles with some striders at the end – striders still make my hamstring a little sore, but not an injury pain at all. Just a reminder that I still need to be careful. I know I’m going to have to build to some speed, but I can tell my body is ready. I’m glad my coach had me take these four weeks to build!

That Sriracha Chicken jerky was delicious! Yum. I also had a honey nut rice cake and ALL the coffee.

Epsom salt soak for a little brain break!

Okay, guys, here’s my new schedule system and it works SO well for me! I have been doing a version of this for weeks, but I really like being able to mark things off, so I decided to write it all down. I posted the other day how this dissertation is challenging because I’m never really finished with anything. Well, this seems to lessen that feeling. I’ve already changed up the elliptical time – I’m going to use that as a brain break later in the day, but I think I’m going to get a ton accomplished today! I used this yesterday and got SO much finished. I know it’s had to see where I marked things out, but the two spots that say ‘Relax’ were used for folding laundry and taking an Epsom soak. This made my day FLY by, but I was productive, so it was great. We will see how today goes! I seem to work best in 30-45 minute increments with these edits right now. When I’m actually writing a chapter, I work better in one to two hour increments. The pinks 3s and Rs tell me what to work on – 3s = chapter 3 edits and Rs = references.

For dinner last night we had Greek burgers and sweet potato fries. It was amazing. The burgers were super simple – 1 pound of lamb mixed with shredded zucchini, onion, and garlic. I mixed it all together, formed 4 patties, and cooked them at 350 for 45 minutes. That’s it! Then I cut a pita in half and stuffed it with all kinds of goodies – avocado, onion, and goat cheese. I also made sweet potato fries in the AirFryer – you just cut them up into strips, mix them with EVOO, salt, and black pepper. I cooked them at 400 for 12 minutes, then 380 for 8 minutes. I shook them up in-between changing temperatures. A quick, easy dinner!

I’ve mentioned before how talented my Dad is with his new hobby of wood working. Check out the coffee table he just finished for my Mom. It’s gorgeous. I’m SO impressed! He’s amazing.

We let the dogs out before bed last night and came into Aspen laying like this…I couldn’t stop laughing. She’s a mess.

Ready to knock out my list for the day! Jake and I have Health Tracks later, then we are going to dinner with his family to celebrate his Mom’s Birthday!! Can’t wait to see them!
