Snow day fun + speed work + more Elk deliciousness!

I loved our snow day yesterday. Lu and I spent some time lounging in bed while I did a little computer work. She was extra cuddly after she chowed down on her breakfast. 
Egg sandwich and super greens with collagen for breakfast! I didn’t put Sriracha on this yesterday since I was going to run after I ate. I definitely missed the extra heat. 
I attempted to go through my closet yesterday. I made it through my shirts, my running shorts, and yoga tights. I needed to go through my hats, but I ran out of time. Do I have too many?
I have a very real problem of showing all of my emotions on my face. It has gotten me into trouble before when someone says something outrageous…and it also makes it very easy for people to read me. I can’t tell you how many time I made this face to my students when I was in the classroom. I try to be aware of my facial expressions, but I usually don’t catch them in time. 
It was pretty slick and cold out, so I opted for the treadmill for my speed work yesterday. I started in a long-sleeved shirt and took it off after a mile. I was pretty sweaty when I finished! This speed work felt easier then my speed work in the past few weeks, so I’m hoping that’s a good sign! This training is different for me – less mileage and slower paces, so sometimes that’s hard. I would love to run a 3:45ish marathon, so that’s what my coach has me working toward with this plan. I trust her, so I’m trusting this process! 
I ended with 8 miles for the day. I did some work with 7:00 and 8:00 paces. It all felt really good, so I’m thankful for that!
After my run, I had lunch. Banza chickpea pasta, chicken, and veggies. I topped everything with nutritional yeast and Sriracha.
This girl. She sure loves snow. When she was a puppy, she would sprint and jump into huge piles of snow and I couldn’t find her. It was hilarious. She has just always been a snow lover! She wanted to be outside so much yesterday. Every time I called her back in, her face was covered with snow.
After lunch, I got my lifting workout in, then it was time for a snack. A good snack hack that I forgot – add PB2 or PBFit to your yogurt (any powdered peanut butter). YUM. I have been buying a new yogurt, so I added collagen and PBFit to it yesterday. It was delicious! I also had some spearmint tea. Jake’s Grandma said peppermint helped with cramps, and since I didn’t have peppermint, I tried spearmint. I think it helped a little!
This picture popped up on something yesterday and it made me smile. We sure miss our Aspey girl, but I know she’s running ALL the trails in Heaven. Also, if you are reading this on your phone or tablet, zoom in on Aspen’s face for a good laugh. She looks terrified. 
All the nose bleeds. Maybe one day I’ll grow out of this…and yes, I 100% was in my robe at 4PM. I had worked out and showered, so it was robe time.
This is some of our favorite wine. Jake got this for Christmas, and since I’m super into eating/drinking his Christmas presents, I helped myself to a glass of this last night. The RedVolution is our favorite, but they have a ton of other kinds. I think we had the merlot once and it was delicious, too. 
For dinner, we had Elk and my favorite brussels. We got a bunch of Elk as a Christmas present from my birth mom’s boyfriend, Mitch, and it is AMAZING. One of our favorite presents! <3 All I did to it was use Primal Palate’s steak seasoning and cook it in ghee on the stove top. It was my first time ever searing/frying anything like this, so I was nervous. It turned out really good!

I also made my all-time favorite brussels sprouts. Did you know that’s what they’re called? I used to think it was brussel sprouts. Anyway, all you do with these is sauté them in olive oil for about 10 minutes over medium heat (I halve mine), then add honey, balsamic vinegar, and garlic powder. I let them cook with all of that for about 20 minutes, stirring occasionally. That’s it! They’re my favorite. 
Everything was super good. I am loving experimenting with Elk.

I just got back from my easy run, so it’s time to get ready and head to campus to teach. It doesn’t feel like Thursday to me. This week flew by!

    You are so adventurous with food, Chelsea. There is NO WAY you would EVER find me eating Elk. I would worry that it would taste bad and then I wasted so much time cooking it. Haha! BUT I guess if I was given the chance to try it when someone else had already made it and enjoyed it, I “might” try it. Also, are you finding that adding meat back to your diet has been beneficial to your running?

      It really doesn’t taste too funky! I think you should I try it. 🙂
      I don’t know if I notice that much of a difference, but I do think getting more protein is helping. I do feel stronger!
