Highly recommend this lunch + SO close + recent books I’ve loved

This lunch has been amazing all week. It’s so easy to throw together, too. I highly recommend it if you’re looking for a new healthy lunch. All you have to do is prep whatever veggies you want, then throw them on a sandwich with whatever fixings you want. Ours have Yum Yum Sauce, cheese, green pepper, tomato, onion, avocado, spicy banana peppers, and cucumber. So. Good. I also add a little coconut vinegar. I love all things vinegar.

I spent the day in my workshop…THANK THE LORD IT IS ALMOST OVER. We have group presentations today, then just three hours on Friday. I cannot wait for it to be over. While I was stuck on the computer, Jake knocked out some work in our dining room. Rhea supervised.

Anyone else use primer on their eyelashes? I just started using it again and I love it, but I also laugh when I first put it on because it makes my lashes so white.

This is one of my favorite mascaras. I’ve used it for about two years now and LOVE it. It doesn’t clump and really adds length and thickness. I alternate between this one (pricier) and the one below (inexpensive).

Also, if you’re looking for a really good mascara that is crazy inexpensive, this is it. It’s $4.99 and AMAZING. I use it as my daily mascara.

Jake played golf in a men’s league last night with his Dad, so I met them and his Mom for dinner when they got finished playing. I had a delicious salad with shrimp, candied pecans, apples, and feta.

I headed to the gym this morning rocking all my favorite rabbit gear. Today was arm day and I went up in weight for a few moves, so there’s no way I’ll be able to lift my arms later…I think I’ll run again today, just not sure when. I should go now because it’s not raining, but I’m in work mode and want to knock out a few things, so I may just hit up the treadmill after my workshop this evening.

I am finally back on a reading kick (YAY). Some books I’ve read recently and LOVED are Far From the Tree, Where the Crawdads Sing, East of Mecca, and The Girl With the Louding Voice. They’re ALL so good. I don’t know that I can pick a favorite. Any book recommendations from you? I’d love to hear! I need some books to read when this dang workshop is over.

    What in the world did you eat with your veggie sandwich? They look like puffs of some sort but not 100% sure! Also, I honestly feel like my sandwich is “missing” something if I don’t have some protein (vegetarian or turkey) haha! 😉

      I don’t really know! They’re called Crinkles…ha! That’s not super helpful, but they’re delicious! I’d say they’re similar to some kind of puff.

      I used to feel that way! I’ve been enjoying all of our veggies so much lately. I’m sure I’ll have a bacon craving soon.

    Chelsea, do you have a picture of the package? I searched for crinkles and I didnt find anything?? I bough lots of sandwich ingredients at the store today so I might be in the need of some chips for the week. so I’d love to keep an eye out for them when I run to get fruits and veggies in the morning from whole foods! <3
