Breakfast burritos for the win!! These were delicious. We cooked shredded sweet potato, mushrooms, onion, and yellow peppers for the filling. Then I topped everything with goat cheese, pickled beets, and salsa/Sriracha!

YUM. We used those wraps we love from Mama Jean’s – they’re called Stacy’s. They’re amazing.
I made Jake’s too big and it fell apart on him…
Check out my new Altras!! These are the Solstice and they’re AMAZING. I love the color and they’re super comfy.
I headed to the Y in the afternoon to do a hill workout on the treadmill. I was drenched when I finished. It was definitely a good workout!

I did a version of this workout. I only did it twice because I only needed 4 miles yesterday AND I haven’t been doing hill workouts, so I didn’t want to overdo it. I’m definitely going to keep this workout to do again.
I came home to graduation stuff on my front door! I am getting so close to being finished…I am SO ready.
This chicken is seriously delicious. All I did was chop up three chicken breasts, pour a mixture of Franks Red Hot sauce and water on top, then bake it all at 350 for about 30 minutes. Super simple and super yummy.
Lunch was the Frank’s chicken, asparagus, and Ranch Nut Thins.
I worked on chugging ALL the water yesterday. I usually try to drink 3-4 Nalgenes a day. I think I had 5 yesterday!
Another day, another rice cake snack. Also, is this too much purple? Asking for a friend.
This juice is pretty good! I picked up a couple different kinds when I was grocery shopping the other day.
For dinner, we had lentil pasta and meatballs. I used oatmeal in the meatballs and I think that’s my new favorite ingredient. They turned out delicious.
I also made some sautéed spinach to go with everything.
Jake’s plate was prettier.

Weights and Netflix. Not sure if that’s what this shirt means by “Dominate”, but we will go with it!
Jake was out in the shop most of the evening, so I got caught up on grades, did some weights (as pictured above), stretched, and got in an Epsom salt soak. I played around with some yoga poses, too.

Jake sold his bike, so he spent the evening getting it all spiffy. He brought it into our room and told me and the girls to make room in the bed for him AND the bike. HA! No way, buddy.
I have Health Tracks today, so I’m looking forward to that! I will spend the rest of the day working on dissertation stuff. It feels never-ending, that’s for sure. Graduation cannot come soon enough! Have I been saying that a lot more lately? Probably. I’m just SO ready!
