I prepped a bunch of veggies this weekend for lunches this week. I have been topping them with some cheese and adding a hard-boiled egg and two chicken sausage links on the side. It’s delicious!

We had some bananas that needed to eaten, so I made some peanut butter banana muffins. They don’t look very pretty, but they sure are delicious!
I threw dinner in the crockpot Monday morning – a ham roast with potatoes, carrots, and white onion.
We had swim Monday night and Coop stayed in his float for a whole minute! It was amazing to watch. I was so proud of him.
We got home from swim to this deliciousness! Heinz 57 on potatoes is my favorite.
Tuesday morning started with a run as soon as Coop’s nanny got to our house. I think I smiled the entire run. The weather was incredible and I felt so good. I feel like I’m finally starting to feel like myself again after my surgery.
I had 30 minutes on the schedule for the day, but knocked out 40 because I felt so solid.
Jake had a dentist appointment after work, so Coop and I met him at my dad’s office. We hung out with Jake, my dad, and Kayla (one of my girlfriends) while Jake got his teeth cleaned. Coop loved every minute.
Dinner last night was more of the ham roast, this time in a sandwich, plus potatoes and carrots on the side.
Maybe this is Coop’s subtle way of telling us that he wants to go to work with Jake? Just sitting in his lunchbox.
Coop’s breakfast is always lots of fruit. And a waffle. His current favorite is cotton candy grapes.
It’s supposed to be stormy and rainy here all day, so we’ll be trying to entertain ourselves inside. I have another run to knock out, but I have a feeling I’ll be on the treadmill.
