All. The. Paper. + bagel bites for grownups + weekend plans!

I discovered the secret to making these pancakes less dry. And no, it’s not just more butter and syrup, though that would have been more fun. They just need to be heated up with a lid over them. That’s it! What is simple solution. I blew Jake’s mind with this realization this morning. He was very impressed. (hair flip)

Woof. That’s all I can say about yesterday. If I wasn’t on my computer looking at data and grouping students, I was making copies for our teachers. I had the most productive day, which always feels so good, but my brain definitely hurt when I left for the day. Here is just one grade level and this is only half of the stuff I was working on for them. By the time I was finished, I had totally taken over our work room.

Lunch time! I added some hard-boiled eggs to lunch and they were delicious.

I was worn out after school, so I came home and put sweats on and did laundry, then laid down in bed for a little bit. This girl was pretty excited for some cuddles. We had a really cold, dreary day yesterday, so I was just feeling kind of lazy.

I went to a free class at the library last night, so I had a quick dinner before going to that. I had grown-up bagel ‘bites’ and salad. And a coffee stout. Dinner of champions.

These bagel bites are delicious and they’re so easy to make. I preheated the oven to 375°, got out a baking sheet and placed each half of a bagel face up on the baking sheet. For these, I used Everything Bagel Thins. I topped each bagel half with spaghetti sauce, turkey pepperoni, and seasoning. I didn’t realize we were out of turkey slices and goat cheese, because I would have added both of those to this as well. I baked these at 375° for about 15 minutes. That’s it! So. Good. I topped mine with a little bit of balsamic glaze.

I woke up this morning with the most terrible migraine. I took some medicine, but it hasn’t really kicked in yet, so I am waiting for the pain to go away. I think it’s from staring at my computer all day yesterday. I have some glasses that help with the computer glare, but I forgot to wear them for most of the day yesterday. I’m hoping that my head starts feeling better ASAP. I made the bed and went into the kitchen to get coffee and came back to this. Lu loves cuddling up into pillows. She’s quite the princess.

I will go over to my Grandma’s later today to spend time with her and my family. My Mom and her siblings have an appointment at the funeral home to get some things started. My Grandma is still doing okay and I will update you if anything changes. I am looking forward to spending time with family this weekend.I have a race on Sunday at Dogwood Canyon and I am excited and nervous for it. I haven’t raced trail in a very long time, much less just been on trail. I ran trail on Monday of this week and that was my second time on trail in 3-4 months. We will see how Sunday goes! I’m definitely not going to be racing it, but I am super pumped to spend a couple of hours on the beautiful trails here. I have a 25K, so it will be anywhere from 15-17 miles. You never know with trail miles! They always have Qdoba for us after the run and I am already looking forward to that! I’ll do a recap on Monday – wish me luck! I’m praying my ankle/foot stay pain-free.
