We have had the best anniversary week! It’s not over (YAY!), since we still have a fun dinner date planned for Saturday. I ran a few miles before the gym yesterday. It was SO hot and humid out, but felt amazing to be running outside in the sunshine.

What. A. Weekend! Each day was full of all the things I love – family, running, and sunshine. Friday morning started with the gym,  the last of our egg casserole, and the last day of the workshop I was in all week – YAY!

I promise I did not touch this food…Rhea eats her food like this every single day. She always eats one half, then needs a break. She will usually come back and eat the other half later. It cracks me up.

This lunch has been amazing all week. It’s so easy to throw together, too. I highly recommend it if you’re looking for a new healthy lunch. All you have to do is prep whatever veggies you want, then throw them on a sandwich with whatever fixings you want. Ours have Yum Yum Sauce, cheese, green…
