I host Chats with Chelsea on Wednesdays in all of my classes. These are informal, optional office hours where students can pop-in if needed. I usually only have a few take advantage of this, but I always enjoy the conversations we have.

After my workout Monday morning, I ran a few errands and then did a quick little meal prep. I prepped tempeh, asparagus, brussels, and a big pan of broccoli, cauliflower, and carrots. I love having all of this cooked and stored in the fridge because it’s so easy for us to grab and throw together…

What a great weekend – it was full of quick lunch dates, pool time, work time, and a long bike ride! Rewinding to Friday, I made a little picnic lunch and met Jake during his lunch break.

Breakfast Thursday was another egg, tofu, and spinach burrito. I think tofu scrambles are one of my favorite things. So delicious and SO easy.

I spent a couple of hours reading at the pool Wednesday afternoon. I am so thankful we have an apartment pool! I had the pool to myself yesterday, which was amazing. And to whoever put chairs in the pool, you’re a genius.

The girls and I started our Tuesday morning with a 3 mile walk on the trail. I have been trying to walk them more often since they’re cooped up in the apartment right now.

Breakfast Monday morning: an egg and veggie scramble, half a bagel with almond butter, chia seeds, flaxseeds, and honey, and meatless patty. This hit the spot!
