Mondays are for food…

We chowed down on some Mexican last night at La Paloma…so good! It was my first time going there and I will definitely be back. I got a skinny grapefruit margarita and it was phenomenal. I ordered the Ceviche for dinner and it was super yummy! Jake ordered Carne Asada tacos (his staple), and loved them. Like always, I ate way too many chips and salsa. They’re my weakness…along with chocolate. I just can’t say no!

Today has been a little stressful. I am behind on a couple of things I’ve been working on, so I spent the day playing catch up – not my favorite way to do things! I did 80 minutes of hot yoga, then started knocking out errands. I ran by the grocery store and meal prepped lunches for Jake for the week. Since I’m on break this week, I’ll probably do smoothies for lunch, which is one of my favorite things to when I get to be at home for lunch. I love a good smoothie! I can’t wait for next year, it’ll be smoothies every day! <3

I made Paleo BBQ chicken, which I will put into whole wheat tortillas from Mama Jean’s, and sweet potatoes. I used a variety of sweet potatoes – regular, Purple, and Japanese. If you like sweet potatoes and haven’t branched out yet to try the other varieties, I highly suggest it! The Japanese potatoes are so flavorful – they’re really sweet. Here’s a before and after of the BBQ chicken. It’s not all that pretty beforehand, but it looks much better after it cooks and you shred it. It’s one of Jake’s favorites and it’s pretty amazing. It, of course, has Sriracha on it.

While all that cooked, I had my own lunch, which consisted of a wrap with turkey, ham, jalapenos, spinach, and onion. I also had a yummy salad from Mama Jean’s and some pineapple. All of it was delicious.

After I ate lunch, I got to work. I did some more work on data analysis and did ALL the laundry. It had been awhile since I washed pillows…now it looks like I need to clean the dryer…

​I snacked on some dried mango (MMMMM) and some cajun cashews, which I had never had before and they were the BOMB. Oh, and drank coffee. Lots and lots of coffee.

The girls and I had some visitors later in the day – Val and Lupine! I didn’t get a picture of all three dogs; I don’t think I could have because they were too busy sprinting around like crazies in the backyard chasing each other. Turns out the backyard was pretty muddy. I think you can tell how much fun they had from these muddy towels…Lulu got a nice little bath in the kitchen sink because she was COVERED in mud. As soon as Val and Lupine left, my two angels (eye-roll) passed out on their own separate chairs.

Whenever I call Lu and Aspen angels I think back to the time I came home and found the below picture…they were put in timeout (also pictured) immediately. I miss that pillow every day. Don’t feel sorry for them – they deserved it!
