Still sick, blah, so I decided to focus on all the thing that make me smile! Get ready for lots of food and puppy posts! <3
Last night we had tuna with brussles and asparagus. Holy yum. Jake cooked the tuna in chili oil, rice vinegar, and ginger – it was the BOMB. I baked the brussles and asparagus in the oven at 400 for 20 minutes. They had a tablespoon of ghee, garlic powder, chili powder, and cajun seasoning on them. They were super good, too! I think this was another one of my favorite meals, all prepped and prepared in under 30! Win-win


These two are the best of friends. It make my heart so happy! I’m only mildly concerned that Lu stares out the back window roughly 87% of the day. It looks like her weirdo habits are rubbing off on Aspen. Our poor plant needs a little TLC.

Woke up with zero appetite, so I sipped on coffee and worked on comps for a few hours before I made anything. I usually wake up starving. For breakfast I had two eggs, over easy, blueberries, and Ezekiel toast with almond butter and honey. This is definitely a morning staple!

Aspen and I both LOVE blankets. I think she was mad I stole hers…poor baby girl needs a new collar – cough, cough, Jake! ; )

Brandi and Scottie gave us this lotion. I love the scent! We also have the bath gel, so I feel like we are now complete. I think my Mom and Dad gave us a bottle of this lotion for Christmas, too. As far as I’m concerned, you can NEVER have enough lotion. Ever.

Made the chocolate smoothie from yesterday as a snack this afternoon! I followed the same recipe except I added a stalk of celery and some turmeric, and left out the egg. It was just as good as I remembered/dreamt about all night…


For lunch I heated up some leftovers – the last of our Paleo BBQ chicken and the rest of the brussels and asparagus from last night. I love leftovers because I feel like I have options and don’t have to try and throw something together for lunch. We usually make extra of whatever we are cooking for this purpose. It definitely saves time in the long run!

I am SERIOUSLY ADDICTED to candles. It’s bad. Yankees are definitely my favorite. We always have one to two candles going at all times. I just got this new scent and it is so fantastic. Very soothing and relaxing! I love when I get the Buy Two Get Two Free coupon…I go crazy!

We picked up some flavored coconut water from Ruby’s when we were there. We pretty well just drink water and coffee…not sure if you guys knew I liked coffee. ; ) I really like pineapple, so I’m excited to try this bad boy out later today! I’m saving it as a treat during my class tonight. I have class in Columbia every Wednesday for 3 hours, so I Skype into it whenever I don’t drive to campus. It’s about a 3 hour drive, so I’m glad my professors let me Skype in for most of the semester. I’m the only student in my program not on campus, so I am pretty thankful that they’re flexible with me. I get to wear a headset and everything, so it’s pretty hip. Not. BUT this is my LAST class EVER so I’m not complaining…very much. And now I have this pineapple coconut water as a treat to look forward to!

My class is Qualitative Research 2, soooo, it’s all about different methodologies qual researchers can use, ethical considerations, data analysis, etc. It’s interesting for the most part. Here’s my glamorous “sick” office for the day. I’m out of kleenex, so I’ve resorted to toilet paper. SOS.


I am missing our nephews something fierce. They’re in KC having the time of their lives, I’m sure. Our girls are missing them, too!
