Meal plans + Garmin + trying to come back from being sick is a process…

Since we got home so late on Sunday, we didn’t have time to prep anything for meals (which we knew would be the case). Luckily we had the breakfast casserole I made right before we left, so we didn’t have to worry about breakfast. We also made sure we had things for our lunches on Monday, but that was about it. I would like us to get back to being more Paleo again, so I’m working on that right now. Here is our meal plan for the week! I will post recipes under Eats as we make each meal. I make a slide like this each week and the slide after it contains links to the recipes, that way I can have everything in one place. It definitely makes it easier!

Lunch on Monday was my lunch from Friday that I left at home – it worked out perfectly! Leftover turkey and zucchini burger with beets and brussels (my favorite) and Sriracha. I started watching New Girl again from the beginning during my lunch time. I just LOVE this show.

I didn’t get up to run Monday morning when my alarm went off because it was raining (lame, I know, but I didn’t want to wash my hair!) and I was worn out from our weekend, but I knew I needed to get at least a short run in after school. I did 3 and it hurt. I can tell I’m not totally back to being healthy from my sickness. I hate how long illnesses stay around. Jake has come down with something now, too. Thank goodness it’s different than what I had! I would feel SO terrible if I had gotten him sick. Poor guy. It was REAL sunny despite the clouds and I left my sunnies in the house. Lots of squinting! I was repping my Go Girl half shirt in honor of their half I’m doing again in April. I’m excited!

We went to the grocery store after Jake got home and decided to grab Cesar’s while we were out. We LOVE Cesar’s. I had three chicken tacos sans tortillas, which is what I usually get when we eat there. Sometimes I switch it up with the protein I have, but I really, really like their chicken.

After dinner, we went home to prep lunches for the week. I’m making a Paleo-ish chicken salad, which I will put into wraps for Jake and I will eat it over greens. We are having beets and brussels again with this…you can never have enough! I bought a rotisserie chicken to use in this recipe for the first time. We both sampled it last night and it was AMAZING. I wish I wouldn’t have used the mayo, but sometimes you just need it! ; ) I am going to work on creating a recipe that doesn’t use any mayo. We used to use plain Greek yogurt, but since I’ve switched to no dairy, I need to work on an alternative. I love avocado in chicken salad, but it needs to be eaten pretty quickly. Any ideas?! The last picture is our lunches for the day! Mmmm. Can’t wait to chow down.

As I was prepping, Jake spent some time researching a new watch for me. I got an Apple Watch in November, but it’s just not what I want, so I’m going back to Garmin. We were looking at the fenix 5S, the fenix 3 HR, and the Forerunner 735XT. Jake is the BEST at researching different items, so I’m glad he had some time to help me choose a new watch even though he was feeling really crummy.

I finally got up to my alarm, chugged some coffee, and got ready for a short run. I totally misjudged the weather (I was also excited to try my new gloves), so I got pretty warm. I took my gloves off after about half a mile, ha! I got 4.5 in, but I did not feel great during the run. I really struggled to stay below 9s. I have some work to do before my race! It did feel amazing to get a morning run in again. I have missed them! I definitely don’t feel ready for my day without one.

I showered real quick and then made breakfast. I broke my piece of Ezekiel toast into a million pieces, but I didn’t want to waste it, so I still threw it in the toaster. I thought I had set the pieces in the toaster in a way that would be easy to get out…NOPE. Jake came to the rescue, though, and got all of the pieces out! My hero.

After much research and discussion, we decided on the Forerunner 735XT!!! I just ordered it and it will be here TOMORROW!!! I cannot wait. I loved the fenix 5S, which isn’t out yet, but I don’t think I need something like that right now. Maybe in a few years! I think Jake wants to get the fenix when it comes out, so I will see what he thinks of it.

I’m trying to get motivated to work on an article I’m co-authoring with a research professor at Mizzou. It discusses some research she conducted which is really cool, so I’m enjoying the process. Ever since I submitted my comps, I haven’t done much in terms of writing…it’s just hard to make myself do anything. Maybe later today I’ll want to…fingers crossed! I defend my comps in a few weeks, so I’m ready to get that over with. Mizzou is on spring break right now, so I don’t have class Wednesday night. I’m pumped! 3 extra hours to do whatever I want!
