All the tacos + my favorite socks + IT Pain (Grrr).

I have THREE more class meetings for the class I am taking this semester, then I am FINISHED FOREVER. I am so ready. I’ve been having SERIOUS trouble getting motivated to do my homework…I finally knocked out some of the reading yesterday during my plan time. If skimming is wrong, I don’t want to be right!

Chowed down on this yesterday for lunch – Stacey’s wrap with turkey, ham, spinach, onion, & Sriracha, protein chips, & sweet potatoes. I was stuffed. Oh, & I had a Justin’s PB cup as a treat! Thanks, Ash! <3

I was super worn out yesterday, so I needed to stay busy or I was going to nap. I decided to finish our meal prep for the week, then start on dinner. We love Springer Mountain Farms chicken. It’s delicious. I baked these chicken breasts with a cajun seasoning.

Then I divvied everything up – the chicken, sweet potatoes, & broccoli – & topped it all with Sriracha. We are good to go for the rest of the week! Jake didn’t need lunch for today, so no prepping for him!

When that was finished, I started on dinner. We had taco salads, but I had picked up some ground lamb, so we decided to use that as our protein. Mmm. It was so good! I browned it all & added the Taco Seasoning from Primal Palate. It’s seriously delicious – and it’s Paleo, so it doesn’t make you feel bloated, like a lot of taco seasonings do to me. Check it out!

I also thought we needed margaritas, but again, the sugar that is added in most mixed drinks really kills my stomach, so I experimented with a healthier version. We used this Kombucha, water, & fresh lime juice. They were super refreshing & light! We both loved them.

Here is our spread! Chopped spinach, jalapeno black beans, ground lamp, chopped veggies, and pineapple guacamole. The beans and the goat cheese on top of the guac aren’t Paleo, but everything else is! We call ourselves 85%-ers. ; )

My plate! This meal was super yummy & was pretty simple to throw together. Guac with pineapple in it is probably one of my favorite things – I think I could live off it. <3

Jake had another meeting last night, so I cleaned up the kitchen, then sat down to relax & fold laundry. The socks in the picture on the left are my all-time favorite. They’re called Feetures! and they fit like a dream. On some of the socks, they mark left & right, which really comes in handy when you struggle with that. ; ) As I was folding laundry, I came across these socks of Jake’s & had a pretty good laugh. That guy & his tall socks…gotta love it!

I had planned on running 8 this morning, but woke up with quite a bit of IT pain (UUUUGH) so, I decided not to run today. I may try to get a quick run in before my class starts, it’ll just depend how my knee feels. Jake got called into work super late last night & didn’t get home until pretty early this morning. Because of that, he doesn’t have to be at work until 11, so he was sleeping in a little. I made an egg scramble with spinach, onion, turkey, & ham for breakfast, & had Ezekiel toast with half a banana & some honey on it. YUM.

My IT band was really bothering me as I started walking around, so I iced it as I ate & then continued icing as I drove to school. I think that helped a little, it feels better! I get so frustrated when pains like this happen, but I know I would much rather take one or two days off than be out of commission for weeks or months. So, as of right now, I’m resting today.

The temperature in my classroom fluctuates ALL day – we are freezing one class period & burning up the next. I broke out a dress & my Chuck’s for today…hopefully that helps me stay comfortable!

We are halfway through the work week! Aaaaand 23.5 days left of school. Wahoooo! I hope your Wednesday is wonderful!
