Monday was a whirlwind! I had two phone conferences – one during my lunch/plan time & one right after school. I snacked on this right before my phone call during lunch since I wasn’t sure when I would get to eat my lunch.

Luckily my phone conference ended about 10 minutes before I got students again, so I had time to eat lunch. Leftover Tandoori Chicken on top of spinach. I used mustard and Sriracha as a dressing. It was delicious. I will have this for a couple of days this week.

Then I had a phone conference right after school, which lasted about an hour & a half. After that, I did some planks & weights in the garage. I’m trying to work up to longer planks – it’s taking awhile to build up time…

It. Was. Hot. I was bummed I missed yoga yesterday, but working out in a hot garage was KIND OF the same thing.

Jake got home right as I was finishing up my workout. Our friend Pete let us borrow his tiller (thanks, Pete!), so Jake got started working in the yard while I cooked dinner. I will post this recipe under Eats. IT IS AMAZING. It’s Vegan Chickpea Curry. Super simple & ridiculously yummy. The recipe is here. I have mentioned this before, but I’m so bad about following recipes, I just like to do my own thing. BUUUUT I followed this one pretty closely – I added turmeric, chili powder, mushrooms, & probably half a cup of the curry, which is posted below. Other than that, I followed the recipe. If you make it, let me know what you think! We seriously loved it.

I also finally got around to cooking those Miracle Noodles I had found at Price Cutter last week. They were really good, too. They take on whatever flavor of the dish they’re mixed with, so they worked really well with the curry.

Yummmmm. We have different Sriracha approaches, but they both get the job done! ; ) Personally, I like my bullseye approach…

We took our dinner outside to enjoy the beautiful evening! And wine. Always wine.

Then it was back to yard work! Jake tilled & raked things up while I hauled stuff to the dump pile in the backyard. I’m mildly sore this morning. Our yard is going to look so cute when we finish! We had so much fun talking about what we wanted to do – I think a Lowe’s trip will happen later this week.

The weather was gorgeous last night & the moon was so pretty – this picture doesn’t do it justice.

These two hoodlums…they were tuckered out from playing like crazy all night. We played frisbee for awhile after dinner, too. They loved it.

All 4 of us didn’t sleep that great last night, but we were up early to run. Lu is always so cuddly when she’s sleepy – I love it.

We hadn’t gone on a run together since last week, so I was excited! I’m not sure how Jake was feeling…he LOVES 4 am pictures. But who doesn’t?!

We got 6 in & felt pretty good the whole time. We stayed at a conversation pace, which was nice. I’m so glad we can run together. It makes my heart happy!

Smoothies & eggs for breakfast! I’m doing testing at school today for students who didn’t finish the MAP, so I don’t really know what my day will look like. But I am going to yoga after school & I can’t wait!! I’ve been having ZERO joint pain & I think yoga is a big part of that (knock on wood)!!

Jake sent me some pictures he had on his phone & this was one of them. Man, I wish we were enjoying coffee at The Coffee Ethic right now! But this time on the patio. Sitting outside drinking coffee is my FAVORITE.
