Meal prep + early bed time + SUPER thankful!

I had leftover chicken, quinoa, & black beans for lunch yesterday. All mixed together with Sriracha & salsa, of course!

I submitted ALL final grades for the college courses I taught this spring. YAY! One of the professors I teach with sent me a Starbucks gift card. How sweet was that?! I guess my coffee addiction is well known…

After school, I went to the grocery store to get food for some meal prep for this week – I had put off our meal prep on Sunday since we had everyone over for Mother’s Day. We have been having a lot of chicken & I was craving fish, so I got salmon & tilapia for the rest of the week. I topped the fish filets with honey, Sriracha, garlic, & black pepper. I will put them into wraps for lunches or eat the fish on top of spinach. It’s nice to have options! I also sautéed some asparagus for us to have as a side.

While the fish was baking, I started on dinner. Jake was out on a training ride, so I told him I would have dinner ready when he got home since I knew he’d be starving. He LOVES french dip sandwiches & had been talking about having one for the past week, so I thought I’d surprise him & make us some. This was totally NOT healthy, but they were delicious! I also made sweet potato fries to go with our sandwiches. We both were planning on longer runs in the AM, so a little carbo loading was needed!

I LOVE our AirFryer – Jeff & Penny got this for us & we use it a lot! I need to venture out & use it for things other than sweet potato fries.

I had planned to get some weights in after school, but I got caught up with cooking. Sometimes you need to bring some light weights into the kitchen & workout while you cook. Multi-tasking at its finest! ; )

I’ve never been a huge french dip fan, but I really liked these! My Mom LOVES french dips & Jake said his Mom does, too, so we will have to have our families over the next time we make these. Still eating some leftovers from our BBQ…I think I’m done with the pasta salad. I can’t eat it anymore!

Funny story: After dinner, we cleaned up & put things away, then sat down to relax – this was about 7:45. The next thing I know, we are waking up and it’s 11 pm!! I guess we were both exhausted. Jake was planning on doing a long run this morning, so he set an alarm for 3:50 & went right back to sleep. I didn’t need to run as long as he was planning, so I slept in until 4:20. We both woke up feeling pretty refreshed, so I think we needed an early bed time.

This was our running calendar page for the day…I thought it was SUPER appropriate because in EXACTLY a month, we will be in Colorado running in the mountains!!

Jake got 13 miles in this morning & I got 8.5. I’ve had a tight tendon behind my knee all week, so I’m taking it easy. I’m planning on going to yoga after school, then Jake and I are riding bikes to dinner. We might need another early bed time tonight!

After my run, the girls were STARVING (eye-roll). They weren’t happy about having to pose for this picture. They were pretty stoked, though, about seeing their Dad finish his run – they both took off sprinting toward him & helped him finish his run.

I made us breakfast super fast – 3 minutes! That’s a new record. Jake had to leave early to ride his bike to work. Eggs & smoothies again!

Jake is seriously the best. Ever. My car needed an oil change, & he offered to take it & drop if off for me since I was planning on going to yoga after school. After he dropped my car off, he rode his bike to work & it had just started pouring. Poor guy. And on top of all that, he let me drive his truck! If that’s not true love, I don’t know what is! ; ) Thank you, Jake! You’re the sweetest.

We have a dinner date tonight to chow down on some Mexican! <3 I can’t wait. We will ride bikes to dinner if it’s not raining. After running this morning, yoga after school (me), Jake riding to & from work, & riding bikes to dinner, I think we will both be worn out! Maybe a 7:30 bed time? HA!
2.5 days left of school!!!!! I’m so excited. Some of my friends are already out & I’m SO jealous.
