Pineapple Whip + smoothie recipe + day 1 of my summer class!

As promised, here is the smoothie recipe from yesterday! If you make it, let me know what you think!!
Scoop of protein (we used Vega Chocolate)
2 scoops of collagen peptides
TB of both flax and chia seeds
HUGE handful of spinach
1/2 C frozen blueberries
1/2 zucchini
Ice and water!

First Pineapple Whip of the season! We were pretty pumped. It’s just SO good. <3 We decided we needed some after our dinner last night. We shared, but I think I could’ve eaten 7 cones just by myself…

I finally got to run with my friend Ashley this morning! We had been trying to plan a run for months, but things kept coming up. She kicked my butt, but I had a blast! It was so dang humid, too. We were both drenched at the end.

Then it was home to eat a quick breakfast before heading to campus to teach! I am teaching a summer course every Tuesday. It’s 5 hours long, but only 7 weeks. It’s pretty intense! This morning was our first class meeting, so I was excited to meet all my students. I have a big class and most of them are getting ready to student teach, so it’s a really fun group!

I sent them outside to do a Literacy Walk – I think they liked being able to escape the classroom for a little bit. Because this is a summer course, each class meeting is basically like two days of a regular semester, so there’s a TON of information to cover. Our first day was great!

I didn’t take my lunch with me to campus, I just took some snacks. I was STARVING by the time I got home. I inhaled ALL of this. Whoops. Now I’m ready for a nap… ; )

This was me this morning after my run. Totally started our coffee pot without water. They (I don’t know who “they” is, but I’m currently mad at them) shouldn’t make the thing you need to function so hard to make…because you need it to figure out the dang coffee pot.

I was going to go to yoga later, but my back is bothering me from standing on concrete for 5 hours. Plus, I think a nap is in order…maybe our girls will cuddle me. Doubtful. I think we are having salmon and veggies for dinner tonight (I’ll share the recipes tomorrow) and then packing for Colorado! Eek! One more full day here until we leave – I can’t wait!
