Make this dinner + my favorite part of summer…+ what I’m looking forward to next year!

Someone keeps giving Lu mohawks…it isn’t me! This was after she attempted to smooth her hair back down. Poor thing. She needs a hair cut. Jake also calls HER Lewis. He has since we first started dating. I keep reminding him that she’s a lady, but he says she looks like an Uncle Lewis. She’s so abused.

For dinner last night I made sweet potato veggie nachos! I sliced up two sweet potatoes, tossed the pieces in olive oil, paprika, garlic powder, and some taco seasoning from Primal Palate. I baked them without any toppings for 10 minutes at 375.

While they were baking, I chopped up the veggies for the top – tomato, red pepper, jalapeno, and onion. After the 10 minutes were up, I piled the sweet potato slices and put all the veggies on top. Then I baked it all together for 20 minutes at 375. The last few times we have made these, we used steak, too. I like these because you have a lot of options!

When the nachos were finished baking, I topped them with avocado and cilantro. We also had lentils with Sriracha and fresh limes!

After dinner, Jake had a meeting, so I worked on some school stuff until he got home. Then we sat at the table talking until WAY past our bed time. I have decided that I’m going to apply for jobs all over, so we were discussing states we like/think we would like and areas that we might not be as interested in. There’s definitely a lot to consider!

I didn’t run this morning, so I got to do my favorite thing – lounge in my jammies and drink coffee! This is one of my favorite parts of summer. I love getting to take my time in the mornings and not rush out the door to get to work. While I’d rather start my day with a run, I really love the days that I can drink coffee and wear my robe. It doesn’t happen very often! And now that I’ve completed the Leadville heavy half, I don’t feel like such a poser drinking out of these coffee mugs. ; ) I’m hoping I get to do this a lot more next year since I won’t be going back to teaching full-time while I finish my dissertation.

Breakfast! Mmm. Coffee. Double mmm. I’m back to black coffee this week! I used up all my Ripple Vanilla milk, so I need more!

I am obsessed with this lap desk. I have had it for YEARS. The next few weeks are going to be bonkers, so I spent some time this morning looking over my planner and mentally preparing. All while drinking coffee, of course. Also, can we take a moment to talk about the fact that it’s almost July??? What the heck. How did that happen? This summer is FLYING.

My friend Michelle sent me this awhile ago – I was the worst and read it, died laughing, then totally forgot to tell her how hilarious she is. I mean, it seems fine to me! ; )

Since I didn’t run today, I’m planning on going to yoga and doing a weight circuit in the garage later. I have a TON of work to do on my dissertation proposal, so I’m going to spend the next 5 or so hours working on that. It’s hard for me to sit and work on my computer for long periods of time when I don’t run, so we will see how this goes.

    I can’t believe how fast the summer is flying by, and that it is only 2 days until July!!
    Do you have any plans for the long weekend? Is this a long weekend for you?
    I am in Canada, so it is Canada Day on Saturday but we get the Monday off as a holiday since July 1 falls on the weekend. Since it is Canada’s 150th birthday this year, it is going to be an extra-exciting one. We are going to watch the Jays game on Saturday and then will probably go watch Fireworks in the evening. Can’t wait!

      I know – this summer is absolutely flying! I can’t believe it. We don’t have a long weekend this weekend, and I’m not sure yet what we are going to do on the 4th of July. Probably just watch fireworks somewhere and relax! Your weekend sounds SO fun – I hope you enjoy it! I had no idea it was Canada’s 150th birthday – how cool. Thank you for sharing!
