Bad timing + made up recipes

Welp, didn’t time my run all that well yesterday. As soon as I got a mile away from home, it started pouring. Luckily that didn’t last long and it just drizzled for the remainder of my run. It was such a gloomy morning!

My hat had water dripping from it, but thankfully it was fairly warm out. I don’t love runs when it’s cold AND rainy. I prefer warm rain. Anyone else like the cold drizzle instead? You’re tougher than I am!

I got 6 miles in at a pretty comfortable pace. I remember when this pace would have only been sustainable for me for a few miles and it would have hurt. Bad. It’s nice to see some progress!

After my run I made a HUGE smoothie. It had protein powder, MCT Oil, spinach, blueberries, half a banana, unsweetened chocolate almond milk, nutmeg, cinnamon, and some super greens powder. It was delicious! I sipped on this while I ran errands around town yesterday afternoon.

When I got home, our front porch was covered in packages! YAY!

Thank goodness these came today! We had been out of collagen for a few days and I used up the last of the MCT Oil in my smoothie for lunch. Perfect timing! <3

I apologize for the Instagram picture – I forgot to take a regular picture! BUT I got some new gear and I was PUMPED. I’ve been needing new running shorts and sports bras.

Ladies, oh my gosh. Does anyone wear Brooks sports bras?? I’m obsessed. This is THE most comfortable sport bra I’ve ever put on. I will run in it for the first time this afternoon, so stay tuned to see how that goes! So far, I love love love it.

Trying on clothes REALLY takes it out of me ; ) so, I had a snack after running errands and trying on my new goodies. Just some leftovers from dinner the other night. I ate the brussels and mushrooms cold. Wow. They were yummy!

I got this message from a reader yesterday – what?! How cool is this? I showed Jake and he was like, we need those. Now. I see a Target trip happening in the near future…yay! Thank you!! <3

Then it was home to start dinner! We had some chicken and zucchini we needed to use up since we are leaving this afternoon for Colorado, but I didn’t know what I wanted to make with them. I decided Honey Mustard Chicken sounded good! This was SO easy and turned out AMAZING. I sautéed onion and garlic in avocado oil, then added in the chicken chunks, while that cooked a little, I chopped up the zucchini and added it to another thing of avocado oil, onion, and garlic sautéing. I added stone ground mustard, honey, and cayenne pepper to the chicken and just let it all cook together. Then I added black pepper and turmeric to the zucchini. That’s it! Super healthy, but SO full of flavor. For real. This meal was awesome.

Jake got called into work right as dinner was ready (poor guy), so I watched a little Shameless and ate while he was out working. The cayenne pepper made the chicken pretty spicy (I don’t measure things, so I may have put too much on there), so I didn’t add Sriracha to the chicken, just the veggies. Mmm. I could eat this meal every night!

These. These are my all-time favorite storage containers. The lids snap on and nothing can leak out of them! I think I got these from Bed, Bath, and Beyond a couple years ago. They’re glass, too, which I love.

Then I took a little break from relaxing to pack. I got everything packed minus the things I couldn’t pack until today. I wrote them on our mirror so we wouldn’t forget! I’m finding uses for the huge amount of Expo markers I brought home from packing up my classroom! Ha!

Then it was to the couch to relax with my girls. Lu really wanted me to share my wine. Not gonna happen! ; )

I went to bed pretty early because my PLAN was to get up around 4 and run. Well, I definitely turned my alarm off and didn’t get up until 8! What is wrong with me?! I got about 10 hours of sleep. Who knows! I miss my early morning runs though. I’ll go run here in a little bit, probably on the treadmill. We will be in the car for 6 hours later, so I need to run and tire my legs out.

We will have different people staying at our house to take care of our babies a lot this summer while we are gone, so I decided to stop frantically writing up directions every time we leave. Taped this to the food bin and we are good to go! Lu is a food jerk, so we have to watch them!

I’m almost finished packing, so all I need to do today is run some errands, RUN, work on my proposal, and finish the last bit of packing. The guys have a short ride to do when we get to Leadville tomorrow afternoon, so while they’re doing that, I’ll write up a blog post! I’ll be a little later than usual, but I’ll fill you in on the first leg of our trip. There’s 5 (I think) of us going this time, me and the 4 guys who are all racing. I’m excited to watch them!
