This huge thing was full of cold brew…can you drink too much coffee???? I say no!

After my class, it was home to chow down on this deliciousness for lunch. I was STARVING (like always). I just threw together a bunch of leftovers – spinach, cauliflower fried rice, chicken, sweet potatoes, onion, and blueberries. Then I had some beets and plantain chips on the side for good measure. This lunch was AMAZING. For the dressing I used balsamic vinegar, olive oil, and Sriracha. <3 <3 <3

This new hat from Skratch Labs came yesterday! I was PUMPED. They’re one of our favorite lines for nutrition and hydration. Everything is natural!

After lunch, I took a short nap, then mowed a little. It was HOT. Jake came home and finished the yard, then went on an hour long ride. While he was gone, I worked on some paperwork and then got started on dinner. I actually followed recipes!!! I made THIS salmon, which was SO good and ridiculously easy. I’ll probably eat the rest for lunch today!

I guess I didn’t FULLY follow recipes, but I kind of did, so it counts! ; ) I made THESE brussels (using ghee instead of butter), and just added balsamic vinegar and a little honey at the end, and left out the parmesan cheese since we already have that on the salmon. They turned out super good! Oh, and I added onion.

Jake got home just as I was finishing up! While he cleaned up, I made our plates. He also had a piece of Ezekiel bread with butter and garlic powder. He shared a little with me. That’s true love!

I think I ate all of this in like 4 minutes. It was SO good. I highly recommend those recipes! If you make them, let me know what you think and if you make any substitutions!

We saved room for dessert! Currently obsessed with these Outshine fruit bars. My favorite is the coconut and Jake loves the pineapple. They’re SO refreshing. Mmm. I kinda want one right now…at 6:30 am…

After dinner and dessert, I spent some time rolling. My legs are sore from our leg workout on Monday and my hill repeats on Tuesday. Rolling hurt, but felt SO good.

We went to bed early, which was wonderful. Our alarms went off at 4 am, the girls weren’t too happy about it. As soon as we made the bed, Aspen hopped back up there to sleep and Lu went to her window seat. Then they glared at me. Talk about high maintenance…

I did a little stretching in the kitchen while I sipped on my coffee. My legs are still a little sore this morning, but feeling MUCH better than they did yesterday!

This little furball came off her window perch to get some cuddles while I stretched.


Ready for a short run! We both have sleepy eyes.

I only needed 3 miles today, so Jake added 2 more miles after we did that together. It was SO humid this morning. I was drenched after my 3.

My goal today – finishing the first chapter of my dissertation proposal. I’m telling you that so I have some accountability! I HAVE to finish it today so I can start on chapter 2 tomorrow. It’s happening! I’m going to eat breakfast real quick and then get started! Feel free to text/message/comment and make sure I’m working and not napping…I just LOVE naps. BUT NONE TODAY! ; )

I’m curious about why you workout so early? I mean that is goals! I work out around 6:30 a which has been a revelation! I don’t seem to run as fast early as I do evening, but my weight work is ok and I feel better mentally all day.

Haha, I DID work! I didn’t get everything finished, but I did spend the WHOLE day working.
I run so early because I just seem to do better in the mornings. Plus, that’s when most of my races are, so I stay on that schedule. I can definitely relate to feeling better mentally when I work out in the morning, I’m so worn out in the evenings!
