End of the semester + feeling anxious.

My watch has a Race Predictor and the updated times gave me a pretty good laugh yesterday. I’m not trying to be negative, but I don’t think I can quite get these times…maybe one day!

I had the last class meeting for the course I taught at MSU yesterday – I had to take a huge bag with me to carry all the final projects to my car. That bag was FULL. My students worked with middle school and high school students all summer, so they put together a portfolio of the assessments, lessons, student work, and some reflective papers. All their hard work in one place!

All the hard copies of the portfolios – some students turned in digital copies. I think there were 26 total.

I grabbed a salad from Panera on the way home – groceries are limited at our house since we are leaving for Colorado this week, and then I got started grading. My goal was to get all of the portfolios graded yesterday and then start on editing the first chapter of my dissertation proposal, which is also the shortest. I managed to get ALL of them graded! I filled out the rubric for each portfolio and wrote notes to students. And I got ALMOST all of my first chapter edited. It was a busy afternoon/evening!

This salad was awesome. I think it was the Spicy Thai?? YUM.

I just got these new ponytail holders and I love them! They are stretchy, so I don’t get a headache from having my hair pulled back. They kind of look like a stretchy keychain ring.
Picture

I can’t listen to music with words when I’m working on stuff because I get too distracted, but I love listening to Vitamin String Quartet. Check them out! Sometimes I find myself singing along to the music, so I have to make myself focus, but it’s super relaxing and they have a HUGE variety of covers.

My socks came in the mail!!! These are seriously my all-time favorite socks. They have varying levels of cushion, so I got one of each. : ) I NEEDED all of these. I have been running solely in Feetures! for over a year now.

I worked until Jake got home from an interview with Kuat. They’re sponsoring him for the race series! Isn’t that awesome?! Jake has always loved their products and the guys that work for them here in town, so I’m super excited for him. The girls aren’t allowed in the kitchen when we are cooking, so they sat like this until we fed them supper. They’re just so goofy. And no, they don’t just do this on their own. We had gotten onto them a few times…they like to slowly walk over to the kitchen and peak around the cabinets, like we can’t see them. As soon as you look at them, they know they’re aren’t supposed to be doing that. Lu will walk backwards out of the kitchen, which always cracks me up and Aspen immediately turns around and goes to lay down.

We had spaghetti and meatballs for dinner. I LOOOOVE these meatballs –  they’re so good! I had forgotten about them until I saw them at Walmart the other day. I used to get them all the time! They’re super simple – you just bake them!
Picture

YUM. Jake made an awesome red veggie sauce for our noodles, which are on top of some spinach miracle noodles, which is made from Shirataki, which is the root of a plant. They take on the flavor of whatever they’re mixed with. That’s pretty much all I know about them! They smell funny when you first open the package, but that smell cooks out.

After dinner, we ran some errands and brought the girls with us. They LOVE the car. Here’s my failed attempt at getting a picture with them. Aspen was way too excited to hold still for a silly picture.

I could not stop hitting snooze this morning. I don’t know why it was so hard to get out of bed, but I just couldn’t. I’m usually really good about getting up right when my alarm goes off, mostly because the sound annoys me, but I just didn’t care this morning. Jake told me I could just stay in bed and sleep, so that’s what finally got me up. Stubborn much? Eye-roll. When I told him I couldn’t believe he said that, he smiled and said that he was testing me. He knew it would get me up. Trickster. But also, I almost DID stay in bed…

Jake had a track workout and I just had a 5-6 mile run, so we got to run together! We did a 2 mile run to the track, Jake did a 2 mile workout on the track while I just kind of ran around the area, then we ran 2 miles home. It was a good run and Jake KILLED his workout. It was also SO humid.

Picture

My failed attempt at getting a picture of Jake – he’s just too dang fast. He’s the blur.

Back home before 6 am and ready for the day! I love getting to run with him. Most days… ; )
Picture

I made Jake breakfast before he left and told him I was going to the store to knock out our grocery shopping, plus we were out of eggs. He offered to buy me a coffee at the store on his way to work, even with me looking like this! True love. My hair was still sweaty from my run…it wasn’t pretty.
Picture

I saw this and decided I needed pancakes this morning. This is what happens when you go to the store hungry…
Picture

But they were SO good! And we FINALLY have Sriracha again – it’s been a rough few days…

Today is dedicated to editing and revising Chapter 2. I need to start packing a little, too. I will probably pack whenever I need to take a break. I’m planning on taking my work with me to Colorado, but I would like to have the bulk of it finished before we leave. I think if I can get Chapter 2 edited today and Chapter 3 on Thursday, I’ll be in a good place! Then I can just focus on references and last minute items before it’s due August 14th. I think it’s going to work!!!
Cheers to Wednesday!

Kodiak Cakes are not available here in Canada, but I was recently in the states and picked up three boxes to try – I think I got Buttermilk, Dark Chocolate, and Peanut Butter. I haven’t opened them yet but I am excited and your post reminded me that I must try them soon! I haven’t eaten many pancakes or waffles in the last couple years because I would always slather them in maple syrup, I’ll have to see how they are with little or no syrup!
    Have a super day! 🙂

Oh!!! I bet the Dark Chocolate and the Peanut Butter are GOOOOOD! I’ll have to try those. I like syrup, too. I have found that if I use real syrup, it’s sweeter, so then I don’t put as much on it. Try that if you haven’t! 🙂
      Have a great day!
