After my run yesterday, I chowed down on two eggs and this orange cranberry half bagel thing (ha – I have no clue what it’s called!) that I found at Whole Foods – it’s super good! My eggs are REALLY missing Sriracha…I’m trying to stay away from hot stuff (which is the WORST) because of my acid reflux. I’m almost back to normal!

After breakfast, we headed to Vail with Chelsea (Jake’s sister) and his Mom, Penny – we had a SUPER fun, relaxing day walking around to different shops and just getting to hang out. I guess we didn’t tell Jake we were taking a goofy picture…

We ate at this super delicious little pub in Vail, I can’t remember the name. Jake and I shared this pulled chicken sandwich and a veggie sandwich. I love that we almost always pick out the same two things on the menu – it makes sharing perfect!

The veggie sandwich was good, too!

After Vail, we dropped Penny and Chelsea back at the condo, then we headed to Jake’s massage. I decided to try out Pug Ryan’s Brewery while he was getting his massage. I’m SO glad I did. I had a Nitro Stout that was phenomenal! I also ran to the grocery store because I cooked dinner last night.

I made stuffed peppers – mine is the one in the middle with light cheese – stupid acid reflux…

We also had sweet potatoes and a spinach salad. It was SO nice to get to cook – I’ve missed cooking every night. After dinner we played some games and then went to get ice cream while Jake did some planning for his race. I seriously don’t know how he handles all of this – just looking at the plans he had made for hourly fluid and nutrition intake blew my mind. He continues to impress me every single day. I’m also the worst at math – no thank you!

Then it was up to run! I FINALLY found some thin gloves that worked with my iPhone – I only have thicker ones, so I rarely run with them because I get too hot. These are from Ice Breaker and they’re the best!

It was cool when I started by run, but after my 4 miles, I got hot! I had to take my long-sleeve off after 2 miles.

After I ran, I made a quick breakfast of an egg/veggie scramble and a bagel for me and Jake, and then we hit the road to go to Leadville to scope out the race course. Jake and John wanted to refresh us on where we would be set up to crew for them during the hundred.

I posted a sappy post on Instagram about how proud I am of Jake, but I really am. I honestly don’t know how he is handling all of this, but he is, and he’s having fun while he’s doing it. He’s pretty awesome. Oh, and he’s staying hydrated! ; )

This is one of the spots where we will get to see them run through!

Then we took the guys to check-in for the race. They got their packets, shirts, and lots of good stuff!

Then we came back to Frisco and went to lunch with Jeff, Penny, and Chelsea. Again, Jake and I picked two of the same things, so we shared them! Ahi tuna tacos with mango salsa – YUM.

And a chopped salad with chicken!

Now we are all back at the condo relaxing and working on different things. The guys are getting their race stuff together and I’m finishing up some computer work. I think we will have a relaxing evening!
We will be in Leadville again tomorrow morning for a race meeting, then it’ll be back to the condo to relax before the 4 am race start on Saturday.
Happy Thursday, everyone!
