The rest of Monday + and some Tuesday + Wednesday happenings!

This little one had been sticking to my side ever since we got home from Colorado. We were gone for 18 days, so I think she’s worried we will leave again. Aspen keeps close, too, but she just stares at me, which starts to drive me crazy after awhile. Lu wants to be touching me at all times, which is very unlike her. Our sweet babies missed us. I think she liked leaning against the pillow tower I made to elevate my foot as I iced it.

We typically buy almond butter, but I was craving peanut butter, so I picked some up at the store. Holy yum. It’s soooo good. Especially on a banana…or by the spoonful…

Went to take my dirty dish to the kitchen and came back to this…she always steals my spot and then just looks at me like, what, Mom?

I iced and heated my ankle most of the morning. The swelling went down significantly! I sprained my ankle pretty badly running trail on Sunday. It was hard to walk Sunday night, but this was Monday morning and I was able to get around much better!

This is Aspen’s chair. If we are at home, there’s a 98% chance that she’s sitting in it. We have two of these chairs, but this one is her favorite.

For lunch I had some yummy leftovers from Galloway Grill and Metro Grill. Mmmmm!

These got messy, but they’re super good! I made more egg muffins, but I put some different stuff in them this time.
Recipe for 12 egg muffins: Beat 12 eggs together, add 1/2 C chopped onion, add 1 C chopped mushroom, add 1 jalapeño, add 1/3 C shredded mozzarella cheese, add 1 C chopped spinach, make turkey bacon and crumble it up into the mixture (I did 5 pieces), then spray the muffin tins, place turkey in them, and pile in the egg mixture. Bake all of that at 350 for 15-25 minutes; it just depends how much stuff you put in them. Then enjoy! We just store them in the fridge (about 4 days) and heat them up in the microwave or eat them cold! Sriracha on top is also a good option! ; )

I also prepped some beets. Just chop these, I think there’s 6 here, drizzle with olive oil and whatever other seasoning you’d like (I did garlic and black pepper), then bake at 400 for 15 minutes, stir them, then bake another 20-25 minutes.

We were going to be down at Two Rivers helping set up the airbag, so I made a dinner we could eat quickly before we left the house. I chopped up two chicken breasts, three peppers, half an onion, and threw it all in a baking dish with some sugar snap peas. Then I topped it all with garlic, black pepper, a little Italian dressing, and some garlic sauce coconut aminos. I baked all of this at 350 for about 35 minutes, stirring occasionally.

Then we chowed down on the beets and the chicken veggie mixture before we hit the road to go to Two Rivers! I put a little too much olive oil on the beets…they were too soggy. Boo.

When we got to Two Rivers, the guys started setting up the air bag – they wouldn’t let me help, not that I would’ve been able to do much. People will ride their bikes off of a ramp onto this thing. No joke. No thanks! That terrifies me.

It weighs about a ton and half, I think. it’s huge.

I rested on a tailgate and enjoyed these pistachios. It was hard work watching the guys inflate the air bag.

After they got it inflated, they all climbed inside to check for holes. It was pretty hilarious watching them climb in and out of the air bag.

Jake and Lori going over some last minute race course stuff – Lori puts all of this together. She’s amazing! Jake was filthy after crawling around inside the air bag.

On our way home I decided I needed some ice cream. I was feeling kind of blah and sweets just sounded so good. I couldn’t eat all of mine, so I made Jake finish it off – he’s a lifesaver!

I didn’t run Monday, but I was determined to get my tempo run in Tuesday morning. My ankle was a little sore when I woke up, but nothing like it had been. It was still swollen, here are both ankles to compare, but it really didn’t hurt all that bad.

It looks a lot better from this angle! I put my running stuff on with the mindset of planning to do my workout, but knowing that if it was super painful, I would stop.

My ankle was sore, but it did not hurt at all! No sharp pain or anything like. I ended with 7 miles for the day. I did a 2.5 mile warm-up, mostly because I didn’t want to start my tempo on a hill, then did a 30 minute tempo at about an 8 minute pace, then a half mile cool down. My ankle actually felt better when I was running than when I walk. I paid close attention to my form to make sure I wasn’t overcompensating because I didn’t want to cause an injury in another place trying to run on a sprained ankle. I was SO happy to be able to get a run in!

I came home, ate breakfast, iced my ankle, and did some wedding planning stuff – EEK! Again with the lack of space from our littlest fur.

I spent a couple hours working on the two online classes I’m teaching, then I took a break to eat lunch. I made a quesadilla and it was delicious!

I took my dirty plate to the kitchen and came back to this seat thief…every. dang. time.

Jake and I did some wedding stuff when he got home from work, then I started on dinner. We had a pineapple that needed to be used up, so I combined that with an orange, some steak, and a chicken breast to make an Orange Pineapple Chicken and Steak dish.

It turned out pretty yummy! We also had some brussels sprouts (did you know that’s their real name? With the s on the end? I didn’t!), and a Caesar salad. With Sriracha. <3

I’m headed to run now, then go help Lori stuff packets for the races this weekend at Single Track Mind. I’m looking forward to it! I love doing stuff like that, plus, Lori is a blast, so I’m excited to spend some time with her!
