All the meal prep + a home project!

After my run and breakfast yesterday, I ran a couple of errands, one of which was to go to the grocery store to get our food for the week so I could start prepping. I stopped by Mama Jean’s for a couple of things and decided that I was starving, so I picked up their Farmhouse salad, which is one of my favorites. Someone accidentally took my food instead of their own, so I got a new salad made and they topped with some avocado for free! It was delicious.

Then it was time to chop some veggies! I had about an hour to get some stuff accomplished before my phone meeting, so I started chopping everything. This week, Jake is taking BBQ chicken sandwiches and sweet potatoes for lunch, and for dinners we are having garlic lemon shrimp and asparagus, spaghetti squash and meatballs, turkey burgers and salad, and pasta and salad.

I threw Jake’s chicken in the crockpot first. Raw chicken isn’t always the nicest to look at, so here it is finished. ; ) I put 6 chicken breasts in there, so it made a lot!

I also chopped up and baked a bunch of sweet potatoes. I usually add onion to these when I bake them. I also put olive oil, cayenne pepper, black pepper, and a little bit of salt of these. I usually cook about 3 day’s worth of sweet potatoes because they can get soggy. I’ll cook more later this week.

Some of Jake’s lunches! I put the BBQ chicken on Hawaiian rolls, which he loves. He has to eat all of his lunches cold, so I try to come up with things that taste good cold. Jake is a lineman for a local rural electric company, so he’s working outside every day. He will eat anything and not complain, but I still want him to enjoy his lunch!

I love having everything packed individually, it saves SO much time when packing lunches. Carrots and celery with peanut butter! Does anyone else meal prep while watching Netflix? That’s the only way I do it!

I wanted to make a big breakfast casserole, so I threw breakfast turkey sausage (cooked) and a bunch of veggies into another crockpot and filled it up with eggs beaten with unsweetened almond milk. I cooked all of this on high for about 4 hours.

While the breakfast casserole was cooking, I started on our dinner. The shrimp had been sitting in the fridge in garlic, lemon juice, and a little olive oil for about an hour. I chopped up the asparagus and mixed it in with the shrimp, then dumped everything on a baking sheet and threw it in the over at 350 for 30 minutes.

It turned out super yummy! I also made quinoa, which is under the shrimp and asparagus mixture.

Here’s the breakfast casserole! It makes a ton, so this is a good option if you ever need to feed a bunch of people. This will last us awhile! I scramble it all up as i take it out of the crockpot.

Okay, it’s embarrassing to show you before pictures because we let this room get SO messy, but we just hadn’t found a time to knock it all out. So, here’s part of our laundry room. We had this one shelf in there, and it just started to get random stuff piled on it. We had always talked about putting two shelves in this room, and we even knew the shelving units we wanted, but we never got around to picking them up. We finally grabbed them this weekend and Jake put them together in the garage.

So much better! This is nowhere near being done – we are getting some glass pieces to go on top of each shelf, so we just set everything back on them to get it out of the way, but it already feels much better! We have a third shelf in our garage where the La Croix and other containers like that will go, we just have to finish getting it ready.

These will be PERFECT once we get the glass inserts for the top of each shelf. We both feel a lot better having semi-organized all of this stuff!

I have a problem rolling my eyes…I do it all the time. It drives Jake crazy! Dawn, my birth mom, got me this shirt. Haha! I’ve been trying to close my eyes and roll them, but sometimes I forget. I’m trying! Kind of. ; )

My last long run this week! I have a race this weekend, so I’m going to take it easy the rest of the week. Today was a tough run. It took me almost 4 miles to get into the groove. I hate when that happens! I just felt sluggish.

It was the perfect morning to drink some coffee on the back porch! It’s chilly here, but it feels amazing, especially after a run. There’s what’s left of my bruises from my tumble in my last race – almost back to normal.

Lots of computer work for me today! It’s an overcast day, so I don’t feel bad about being cooped up inside. I’m hoping to get lots of stuff done!
