I can’t run in heat + lots of food!

I stole this from a girlfriend – thanks, Liz! It made me laugh SO hard.

I wanted to get right to work on my proposal, so I put my run off until later. I usually don’t run well after I eat, but I was starving, so I chowed down on this and gave myself 3 hours to let it settle. I was keeping my fingers crossed that it wouldn’t bother me.

About noon, I headed out to run! I don’t love running when it’s hot…and it was hot yesterday. Also, did I tell you that my new shirt from Jake (the one I’m wearing) has a hole in it from my falls a few weekends ago?! I was so bummed. Jake told me it’s cool because it’s carnage from the race…I don’t know if I agree with that! ; )

I only needed to do 4 yesterday, so I’m grateful it was a short run. I was SO hot…and it was only 80 degrees. Eye-roll. Heats just kills me. My stomach didn’t bother me too much, either! This was a run I was glad to be finished with…

I worked on the two online classes I’m teaching this semester – which MAY have been a little much on top of my dissertation, but that’s okay. Then I got hungry again, so I snacked on these. Stilllll in my running clothes.

Then I got a message that our summer mileage shirts had come in, so I immediately went to go grab them! Aren’t they cute?! Now we have another matching shirt. Jake is PUMPED. ; )

I did a little more computer work, then started on dinner. Jake got home about the time I was mixing all of this and he immediately started working on some stuff in our backyard. He’s seriously one of the hardest workers I know! For dinner, we were having meatballs. I made a ton so I could freeze some. For these, I mixed in zucchini, sweet potato, onion, jalapeño, ground turkey, eggs, and seasoning.

After dinner, I needed some bourbon and chocolate. At our engagement party last weekend, we got a bunch of new bourbon to try. It’s like people know it’s our favorite or something…THANK YOU!

Sometimes I’m not super smart and start lifting again the week of a race…after not lifting for almost two months. So, my legs are pretty sore. Dumb dumb dumb. I spent about an hour rolling last night. I’ll do the same again today!

Here’s Jake, still out working until almost 8 pm. I’m so thankful for him! He has such a labor intensive job, then he comes home and works – he was cleaning out our shed and part of the shop last night…while I drank bourbon, ate chocolate, and watched Nashville on Netflix. When he finished working, he came in and we watched the rest of the movie we had started Tuesday night! It was called Magnificent Seven and it was good!

I had my last run this morning before my race Saturday. I did 3 miles with some striders thrown in the middle. Those striders felt SO good on my sore legs. I may or may not have done more striders than I was supposed to because they felt so good. Whoops!

Now I’m off to pick up packets for the race Saturday! Eek! Then I’ll spend the rest of the day doing computer work and stretching. My birthday is on Sunday, so I’m trying to get all my work finished today and tomorrow so I can enjoy the whole weekend and not have to do any work! Fingers crossed.

    Hello Chelsea!
    After seeing your breakfast casserole a few days in a row in your posts (it looks so good)… I wanted to ask… do you just store it in the fridge for the whole week? Does it get soggy/gross/not-fresh? I am always reluctant to leave foods for more than 2-3 days max (2 for meat, maybe 3+ for things like rice) so with meat I always cook a lot, but then freeze it and thaw it back out each day to keep it fresh. Curious on your thoughts about this!

      Hi, Dayle!
      I leave it in the fridge for about 5-6 days…typically we go through it in that time. That might be pushing it, but I hate wasting food and we haven’t had any issues in doing it that way. I’m sure you could freeze the casserole, it might just be a little more soggy in doing so. It gets a little soggy toward the end of the week, but we heat it up and that helps!
