Fall love + our new fire pit + how did I forget about these?!

I am loving the cooler fall temperatures we have been having. Fall is definitely my favorite season. I got this plaid button-up at Target (my weakness) and I’m obsessed with the colors. So perfect for fall!

I had the last little bit of Jake’s enchilada lunch casserole with two eggs for breakfast. Yesterday was my rest day, so it was nice to sit around in the morning, sip my coffee, and eat breakfast. Don’t get me wrong, I LOVE starting my day with a run, but I enjoy my rest days, too. Well, I enjoy the mornings of my rest days. By the afternoons, I’m usually feeling pretty antsy.

After breakfast, I did laundry and went to the grocery store. I’ve been craving no-bake cookies, so I stocked up on ingredients to make some. And I made the old fashioned kind…I usually try and sub some ingredients to make them healthier, but not this time! Jake was pumped.

While the cookies hardened, I had lunch. I made chicken salad for Jake for lunch this week, so I stole a little of that for myself. Again, I usually make this with only Greek yogurt, but I added a little bit of mayonnaise to it this time. Jake likes mayonnaise, so I knew he’d be excited. It turned out pretty good! I also added onion, celery, grapes, dill, cajun seasoning, and garlic powder. YUM. Then I had plantain chips and dried mango with it.

Mmmm. No bakes are my favorite cookie. These stayed a little gooey, which I love!

I took a break from computer stuff and did a push-up and core circuit. During which Lu thought she could nap right next to me on my yoga mat. Every. Dang. Time.

One reason why I love this blog so much – I get to meet awesome people! I had a reader post this the other day and I wanted to share it with you. She made the sweet potato chili I posted last week, but she added some things to it and said it turned out amazing! Here’s what she added! Thank you for sharing, Dayle!

Jake came home with our new fire pit last night! Isn’t it awesome? You can see our other, built-in one to the left. The white spots inside the new one are dust, we just need to wipe it out. It’s a really pretty light gray color. We can’t wait to break it in!

We are working on cleaning out our freezer, so for dinner, I thawed some of the meatballs I made a few weeks ago. I let them heat up on the stove with some BBQ sauce and water, then put them on top of quinoa. They turned out pretty good! Sometimes you need TWO sides of brussels (I still feel funny spelling it this way) sprouts. A salad didn’t really sound very good to me, but Jake wanted one, so I put a little on my plate for good measure. 100% did not eat it. We need to start using small plates. I think I’ve been filling ours up too much.

How I felt about working at 8 PM last night….but hey, graduation is less than a year away! (Trying to stay positive…it’s not always easy!)

Do you ever forget about something that you used to love and were obsessed with, then you find it again and are like, why did I ever stop eating these?! I had that moment yesterday with these waffles. I used to eat these ALL the time. I loved them! I don’t know how I forgot about them, but I did, and I’m ashamed. But they’re back now and I couldn’t be happier!

A little waffle with PB and honey and some coffee before my run. I​’m currently trying to decide if I should run outside and risk the rain, or hop on the treadmill. I haven’t done any treadmill runs in awhile…but I can’t decide! I need 8 miles today, so we will see where they happen!

Jake got my fall decorations out of our attic last night – it’s spooky up there. I’m going to put them out later and I’m excited! Then I need to spend some time on the two online classes I’m teaching this semester and do some work on the article I’ co-authoring. Lots of computer time again. Buuuuut, I am going to dinner with two girlfriends to talk about running, so I’m looking forward to that! One of them, Kayla, is doing the half-marathon in Nashville (I’m doing the full – it’ll be my first) and the other girl, Jyssica, is thinking about signing up for the Nashville full with me or another race. We are just going to get together to talk about goals, running plans, and cute running clothes. ; )

    Fall is my favourite season too! We don’t do much in the way of decorations, but my hubby loves to carve pumpkins haha. I do not love it as I am 0% creative so he carves the pumpkins while I roast the seeds. Yum!

      I’m not very creative, either! We like to carve pumpkins. We didn’t roast the seeds last year, but we need to this year! I love pumpkin seeds.
