Meal prep + Lu’s outing + important running question for my lady runners!

After I went to the grocery store yesterday, I chowed down on this yumminess for lunch. Veggie burger, salad, and plantain chips. Putting Sriracha on plantain chips is my favorite. SO good. Can you eat too much Sriracha? Asking for a friend…

Then it was time to get chopping! I made lunches for the week, prepped sides to go with lunches, and made a breakfast casserole in the crockpot. I feel like once I get veggies chopped, the rest of prep goes pretty quickly!

Has anyone tried this?! I’m pumped. I think we will have these beet noodles Thursday with our tilapia. I have a Spiralizer, but sometimes I can’t pass up buying veggies that have already been noodalized (I made that word up, but it works). ; )

We are having chicken and sweet potatoes for lunch this week. I just put some chicken stock, Coconut Aminos, black pepper, and garlic powder on this. Super simple, but super good!

While the chicken baked, I finished chopping and putting lunch stuff in containers for Jake. This week he is getting veggies and hummus. I’m lucky that he will pretty much eat whatever I make for him. He told me he’s thankful I put his lunches together, so he will eat whatever I have for him. Teamwork makes the dream work, friends!

I also threw all the raw veggies, cooked ground turkey, eggs, and coconut milk in the crockpot for our casserole! Mmmm.

Jake’s lunches for Wednesday – Friday. I love having everything already packed. It makes it SO easy to just put everything into a bag and you’re ready to go.

After the chicken and sweet potatoes baked, I made some Paleo pumpkin banana bread and muffins. I did a little computer work while they baked and Lu napped in the sun.

I did about another hour of computer work while Jake mowed, then I started on dinner. We had shrimp curry over cauliflower rice. It only took about 20 minutes to make this whole meal! We love curries. There are two AMAZING restaurants that we always think of when we have a good curry. There’s one in Austin, TX, and one in Bentonville, AR. I can’t remember the names, but they had some of the best curry I’ve ever had. EVER. <3 We need to go back ASAP.

After dinner, I met a group at Cherry Pickers to celebrate Cortney’s birthday! I took Lu with me and she had a blast. She absolutely loves being in the car. We have to keep the window lock on, though, because she likes to roll the windows down all the way and I get nervous that she will try to jump out. This is her favorite way to ride in a car. Well, this or sitting in my lap.

I’m a sucker and let her sit on my lap on our drive home. She just gets so excited!

Our casserole was finished when I got home, so I separated it and put half in the freezer.

Then it was up to run in the AM! Jake and I did 5 miles together, then I finished up my last 2 on my own. I love having my running buddy back.

This is literally my life. I had a doctor tell me once that I was drinking too much coffee…it was true. I’ve cut back, but I can’t start my day without coffee. I’ve thought about trying to wean myself off of it, but the thought terrifies me. It probably terrifies Jake, too. My days need to start with coffee and a run. Always.

It’s a computer work day for me today! I’m going to knock out a bunch of stuff. I’m glad I got all our prep finished yesterday. That always seems to make the week go by much smoother.

I have a question for my lady runners! I need sports bras that don’t rub. I got some new Brooks bras and I am OBSESSED. They’re amazing and fit perfectly, BUT they’ve started rubbing REALLY bad. My skin is raw in a couple of areas. I won’t stop wearing them, though, because I love them. #stubborn Does anyone have any sports bras they just love? I appreciate any advice! <3

      Anna,
      I love them, too! So much. But the rubbing is awful. It’s the band that goes around my rub cage, right under my boobs. I don’t know that I can adjust that. Maybe I could make the straps longer and wear the bra tighter…maybe that would help! I’ll try!

    I’m back with another food/recipe question!
    Is there egg in your breakfast casserole you did in the crock pot?
    For the portion you froze, will you just thaw and eat another time? Do you know if it freezes well?
    I am going to try this breakfast casserole asap!

      I love it, Dayle! 🙂
      I put 12 eggs in it and probably 3/4 to a cup of unsweetened coconut milk. You want to be able to see the liquid, that way everything is cooking in it. I haven’t frozen it before, so I’m not sure yet! I’m hoping it’ll freeze well. It just makes SO much and I didn’t want any to go to waste. Fingers crossed it freezes well! It’s SO good. And easy!

    I am a total newbie in the kitchen … do you think you could possibly add some cooking instructions for the chicken?? Like how long, at what temp, etc? Also do you put on the sriracha and let it sit all week? Doesn’t that make the potatoes all soggy?

      Hi, Lindsay!
      Of course! I bake the chicken at 350 for about 20-30 minutes.I use a meat thermometer, so that helps a ton! Once the chicken reaches 165 degrees, it’s done!
      I don’t put the Sriracha on anything until I pack it individually. It doesn’t seem to make anything soggy! I like only packing 2 or 3 day’s worth of meals at a time. Sweet potatoes seem to get soggy if I make too much at once. I usually cook sweet potatoes twice during the week to avoid the sogginess!
