The best salad + all the wine + life happens

Can’t stop with this delicious breakfast!! It’s so easy to make (2 minutes) and it keeps me full! You pour oatmeal into a bowl, like normal, crack an egg into it, put the normal amount of water in, stir it all up, then microwave for 2ish minutes. I top mine with PB (the winning factor) and honey, then chow down.

I guess it’s time for me to accept that I will never get my blanket back…

I got some work done and then went to a hot yoga class at noon. It was AMAZING. I think it was the sweatiest I have ever been in yoga, though. For real. I have been really sore the past couple of days, so I’m trying to stretch, drink lots of water, and foam roll. Yoga definitely helps!

One of the runners from our beer run posted this – Jake and I are at the end! Not everyone stayed for dinner, but it was fun to meet new people who love running.

This is my all-time favorite salad kit. I will get this when I’m feeling lazy and just want something easy. It’s SO good. I usually top it with some kind of protein – chicken, a veggie burger, etc.
Picture

I put two chicken tenders on top of the salad for lunch yesterday. It was delicious! I also had some chips, not picture, that were leftover from our BBQ.

I had some ice coffee after lunch. I needed a little pick-me-up to knock out some afternoon work.

I worked for about 2 or 3 hours, sent everything off, and then headed to the store to get the essentials – wine and milk. Jake and I have been super busy this week, so last night was our first night at home together for dinner. We wanted to do a little wedding planning, too, so I picked up some wine for us to sip on while we worked. All the choices! It’s always a tough decision when I go to buy wine – I just want ALL of it. Does anyone have any wine they love? We are red fans!

Safety first, friends! Safety first.

I let Jake pick which wine we would drink. He went with Dreaming Tree! It was pretty good! And yes, he absolutely HATES this tablecloth. I told him I will take it off after Halloween! It’s kind of spooky looking, so it fits.

I was working on a reference list…these are all the references that weren’t on it, but they were in the article, so we had to cite them. Ugh. I had to find the article and create the citation for the reference list. Fun stuff, guys!

My throat was a little sore yesterday, so I started drinking Emergen-C. This is my go-to whenever I feel like I have a cold or something coming on.
Picture

We finished up the last of the soup and cornbread I made on Monday! Jake hadn’t had any of it yet. He loved it! He had two huge bowls. I took the frozen portion out of the freezer, too. I might eat that for lunch today!

We cleaned our plates/bowls!
Picture

Sorry this is blurry, but I was craving chocolate last night. YUM.
Picture

Then we opened our wine and got started on some wedding stuff! We are currently trying to decide on a venue for our reception. We have three in mind that we like, two of which are our favorites.

Remember how our girls are supposed to be on the couch? (I know, I post a picture pretty much everyday of Lu on the couch…) well, they just really wanted to cuddle last night. I couldn’t say no!
Picture
Lu got sick of me and went to cuddle with Jake. Aspen slept like this…no clue how that’s comfortable.

I got hungry again, so I snacked on some carrots and wheat thins.

Finally! I got this email this morning. Now more waiting…once everything is approved, I can start my study! One step closer to graduating….

Eggs and oatmeal, yet again!

It’s my birth mom’s birthday on Saturday! Happy Birthday, Dawn!!! I hope it’s wonderful! <3

This is our weekend!
Picture

Yesterday I told you about our running plans for the weekend…well, that changed. Life happens! We woke up this morning and were both just exhausted. We even went to bed before 9:30! So, instead of doing our hard run when tired, we decided to sleep in. Sometimes you just need more sleep! We will run Saturday and Sunday, which will be just fine. We have 15 trail miles to get in tomorrow morning, then probably 7 or 8 on Sunday.
Jake’s uncle is getting married this weekend, so we are going to his wedding! It’s going to be a blast! Other than that, I think we are pretty open, which is nice!
Any wines you love that we need to try?
What’s everyone up to this weekend?
What’re your weekend running plans? Good luck to anyone racing this weekend!
I hope your weekend is wonderful!

I really love Moscado wine. I guess I never really got into the red wines … but that doesn’t mean I would ever turn down a yummy glass of any wine.
Not too much went on this weekend BUT I did get in two really good workouts. Spin class on Saturday morning and then a 15 mile run this morning at an 8min avg pace. I have got to start picking up the paces for the longer runs or else I won’t be prepped to BQ.
How did your weekend runs go??

      Lindsay,
Dang, girl!!! That’s an amazing 15-milers. So impressed! My weekend runs weren’t great, but I did manage to get a longer one in. I’ve got to start picking up my own paces. I’ve just been worn out lately. I’ve got to figure that out! We did 12 in the cold rain yesterday and it was pretty miserable.
I hope you have a great day!!

Well I was able to get the run done but I am having to take a full rest day today in order to let my legs rest because my hip is not happy and I refuse to “run through it” and have another average marathon. I think I will be hitting the pool in the morning to get some cross-training in. Do you ever swim for another cardio option??

      • Chelsea

Smart girl! Listening to our bodies is SO important. I hope you’re feeling much better!
Oh my gosh – I am so terrible at swimming. I wish I was better at it! It’s such a good workout. I did a sprint tri once an dliterslly had to do the backstroke because I thought I was going to drown…
        Any swimming tips?!
