Resting + pumpkin fun + take a guess + cancer sucks!

This is such a time saver. I like to chop up all the veggies we will use for breakfast ahead of time. That way, all I have to do is throw them into the pan for a little bit, then add the eggs. So simple!  Anyone else have meal prep tricks???

I cleaned yesterday morning – I needed a little brain break from computer work. My Momma stopped by around lunch time to drop this off. Jake and I love soup, especially when it’s cold out, so I’m excited to try this out.

This episode of Parks and Rec always makes me cry! Leslie’s team surprises her for Christmas. I won’t spoil it, just in case someone hasn’t seen it, but if you need a feel good show with all the best quotes, watch Parks! Stick with it through the first couple of episodes. I promise it’s worth it!

Sometimes you just need to sit on your kitchen counter in your compression socks and watch Netflix while drinking tea. Then I realized I needed to ice again.

Last year, we didn’t get a pumpkin carving kit and just used knives from our kitchen. It was SO difficult. So this year, we got a carving kit. What a difference that made! So much easier.

I LOVE pineapples, so I decided that’s what needed to go on my pumpkin. I drew this up thinking the Expo marker would come off easily – I was wrong.

My picture is blurry, but Jake’s looks good! He’s always wearing something Altra, so this pumpkin worked out well! Also, he always wears real clothes. I never do. And my hair is always crazy. I’ve accepted it.

I’m hoping to finish up the article today, then do some more editing on my proposal. As soon as I hear back from IRB, I can start my study, so I want to be ready! We are going to listen to some live music with some friends later, so I’m excited about that! On Saturday, Jake and I have our last long run before our trail race, then we are dong dinner with my family to celebrate my Dad being 4 years post surgery for prostate cancer – he just had a check up last week and everything is perfect! <3 After dinner with them, we have a Halloween party! We are doing our engagement photos on Sunday with the talented Brandi! We can’t wait. It’s going to be chilly…
Any good compression socks I should look into?

    Oh yes!
    I love to prep my breakfast veggies ahead of time! I actually use the food processor and pulse them all to a rice-like consistency. I find these keep in the fridge for 5 days-ish! I do broccoli, red onion, and bell peppers. I find it’s best to use more broccoli than the other veggies and to make sure the broccoli is really dry. The less moisture, the longer the veggie mix lasts! My friend has done this and included zucchini, mushrooms, tomato, purple cabbage, etc. etc. Then do I do the same as you, start them cooking with a bit of avocado oil in the pan, then add eggs. I will often add some spinach too right before I add the eggs if I have it in the fridge. YUM!
    We don’t have pepper jack skinny pop here, but that looks yummy! I really like the plain, and the white cheddar. I almost never buy it for that reason, I can’t control myself. lol

      I’ll have to try that!! It makes it SO much easier to have things prepped ahead of time. 🙂
      The Pepper jack was SO good. I need to not buy anymore for awhile…I just can’t stop eating it once I start!

    Sadly, no Halloween plans here. I might stay home and watch a scary movie and handout candy to the kids in the neighborhood. I unfortunately have to work on Wednesday and will probably have an early morning workout scheduled so I will WANT to get to bed at a reasonable time.
    Which race are you running this weekend again?
    No races this weekend BUT I think I will survive my 16 miler in the morning! 🙂

      Lindsay,
      We are going to a friend’s house to pass out candy on Tuesday. We don’t get many trick-or-treaters at our house, so I think it’ll be fun to get to pass some candy out and see the costumes!
      No race this weekend, we have one on the 11th and 12th. It’s a back-to-back trail race. We will both run a 15k on Saturday, then I’m doing a 25k Sunday and Jake is doing a 50k. I’m excited, but it’s going to be brutal!
      I hope your long run went well!

    Parks and Rec is the best! So true about getting through the first few episodes, maybe even the first season. Eggs never fill me up and then I binge on unhealthy snacks at work so I need to try adding a waffle/toast with peanut butter.

      It’s seriously one of my favorite shows!! And you’re SO right. The first season isn’t the best, but it gets SO good.
      Yes ma’am – that’s why I have to eat more than just eggs. Adding veggies and meat to my eggs helps a lot, too!

      I too struggle to get full on eggs … so what I will do if I am eating eggs for breakfast is I will make a breakfast sandwich with some turkey sausage, canadian bacon, regular bacon (if I am feeling ambitious), or regular deli-meat (if that’s all I have). I will also at times make and omelet but with BOTH meat AND veggies. I am loving the opportunity to copy Chelsea’s mixes of veggies and eggs!
