Weekend Wrap-up!

Breakfast on Friday was my oatmeal and egg concoction again! It hit the spot. I was kind of sick of eggs and toast, so this was a nice change.

I worked all morning on edits, then took a break for lunch. I had leftover cauliflower rice and a turkey burger. I burnt the burger so our house smelled REALLY good for a couple of hours. Eye-roll.

When Jake got home, it was time to head out for our run. My chiropractor wants me using KT Tape on runs, so I got all taped up before we left.

Hoping this will help! I was not feeling a run. At all. I don’t run well later in the day. I get really bad acid reflux if I have food on my stomach. My lunch definitely came back to haunt me after our first mile. We got 5 in total.

After our run, we threw on a change of clothes and headed to the expo to get our packets for our race next weekend. Once we got our packets, we headed to dinner at CB Social House – one of our favorites! We started with our staple appetizer here – fried chicken skins. They are SO good.

This kale salad sounded amazing, so we got that, too. I couldn’t stop eating it. We just got the half size and it was HUGE.

We also got a burger, which was incredible. We couldn’t eat everything, but we gave it our best shot!

After dinner, we decided to grab a drink, so we headed to Mother’s, a super cool brewery here in town. I love flights. I don’t like drinking a lot of beer because it bothers my stomach, but I wanted to try some of Mother’s new beers. I got this flight and loved everything!

Jake was pretty excited that the coaster said, “Beer is 95% water!” Can’t argue with those facts!

Up Saturday to get out last long-ish run in before our trail races next weekend. I wore the new hat a Go Girl rep gave me at the expo on Friday. Isn’t it awesome? This is one of my all-time favorite races. It’s a series and they race all over. I have done the Springfield half three times, but this year, I think I’m going to do the one in Oklahoma City!

For dinner, Lindy and Derek had us over for some AMAZING veggie lasagna, salad, and cheese bread. Thank you, guys! It was so nice to see them and catch up.

After dinner, we had plans to go listen to some live music. We were both worn out, but we thought we’d go for a little bit. We hung out with these two for a little bit!

Breakfast Sunday morning before Thorn-A-Thon, the mountain bike fundraiser for Missouri Off-road Cyclists, which is an organization that Jake is on the board for.

Jake left before me because I was doing some computer stuff and he took Aspen with him. This sad little girl sat here and stared out the window while crying for about 20 minutes when they left.

I didn’t get to stay at the event very long – I had a TON of work to do and was feeling overwhelmed. I stopped by the grocery store on my way home so I could meal prep while I worked. I also picked up this delicious sandwich for lunch. YUM.

I also picked this up. It’s good, but a little too sweet for me. I could only drink a couple sips.

I prepped chicken, purple sweet potatoes, and beets for the week.
Our menu for the week – we have trail races Saturday and Sunday, so we will have lots of pasta beforehand! We both have a 15k on Saturday, then I have a 25k on Sunday and Jake has a 50k. I’m still fighting some hamstring stuff, so I’m hoping that goes away.

Sorry for these pictures, but poor Aspen had so much fun running trail while Jake rode on Sunday that she tore up the pads on two of her paws. It breaks my heart! She can hardly walk right now. She just loves to run so much, she won’t quit when she’s hurt. Poor baby. Jake finally had to put her in his truck to keep her from hurting her paws more.

We got up and did an easy 3 miles this morning. My hamstring had felt a little better over the weekend, but it was firing off for most of our run, soooo that’s a bummer. I need to run to make myself feel less overwhelmed, but bad runs just make it worse. It’s a vicious cycle!

I’m glad I got meal prep done yesterday! I have lofty goals for editing today, but I want to knock a bunch of stuff out, so I’m GOING to do it!

    Your breakfast today looked yummy!
    Oh man, I can’t stop eating the oatmeal/egg concoction. I have even starting calling it that haha. I have found it to be perfect fuel for morning workouts, and work days! Eventually I will get sick of it for sure, but for now I’ve been eating it daily!
    Yesterday we climbed the CN tower for Charity. 1776 steps/142 flights to the top! I finished it in 18:46 and raised $550 so that was fun!
    Sending you healing vibes for your hamstring that it will be good to go this weekend.
