Work + homemade pizza + excitement!

I love having this breakfast casserole ready to just heat up in the mornings! It’s SO easy. You just throw whatever veggies/meat you want in a crockpot, add 2ish cups of coconut milk, 12-14 eggs, and cook it on high for 3/4 hours or low overnights. It’s the best!

I still had a little bit of lingering pain from my migraine yesterday, so I picked up some medicine from the store. If I started having that vision loss again, I will take one of these ASAP. I finally felt almost back to normal around 3 PM!

I did computer work all morning – I’m about to start conducting interviews for my dissertation! I’ll share more about that later. So I was trying to get all ready for that. I snacked on some dandelion tea and Chickpeatos while I did that.

Then it was time for lunch! I threw a bunch of leftovers into a bowl and called it quits. It was delicious.

After lunch, I did more computer work and a little push-up/squat circuit, then I got hungry again. I had planned on going to yoga yesterday, but I do hot yoga and since my head was still bothering me, I didn’t want to do anything that might make it worse.

SUPER exciting news! I’m hosting a Go Girl Run holiday social run as a Go Girl Run ambassador THIS Sunday, December 10th at 4 PM. So, if you’re in the area, come join us! This is a wonderful way for the women in our community to come together. Then it was off to homemade pizza night at Sam and Ryan’s! Here are all our fixins’. Also, I totally failed and didn’t get any pictures of Sam and Ryan’s GORGEOUS kitchen. You can kind of see how beautiful it is in the background of these, but I got pre-occupied with our Olympic activities – I’ll explain later.

While our pizzas were baking, we decided to draw for our Olympic countries. Cassie had this great idea for each one of us to represent a different country participating in the Winter Olympics. We will all get together for big events and have a watch party!

Cassie’s husband, Nick, was working, so she FaceTimed him while she drew his country.

I think he got Normandy! Ryan made sure to play some Olympic themed music throughout this whole process.

I got Austria and Jake got France! After we drew, we all spent some time learning more about our countries. I think we will bring dishes from each country and maybe even dress up to represent our countries’ cultures. We were all pretty excited about it!

Here are our pizzas!! I didn’t put cheese on my pizza, but I had a little bit of feta in the salad. White cheese doesn’t usually bother my stomach or give me acid reflux, so I thought I’d try it. The pizzas were SO good.

Ryan also made these beautiful desserts! He baked the pastry part and then put Halo Top in the middle. They were amazing.

Then it was home with full, happy bellies to play with our girls. Thank you, Sam and Ryan for being such incredible hosts…and letting me drool over your kitchen.

Mother’s posted this yesterday, which is a brewery here in town that we love. Oh my gosh. I cannot wait to try this! I’m a dark beer girl, I just love it!

I’m headed to yoga this morning, then doing another session in the cryosauna. This evening, we are having Sharon Taylor, an interior designer, from Sharon Taylor Designs, come over to help us with how we can move around some decorations and furniture! We are both so excited! We know we want to move sometime in the near future, and when we do that, we’d like to get new furniture, but until then, we love what we have. We just want to do something different with it and I think sometimes it’s hard (for me) to think about placing things differently when I’m so used to seeing what I have in its current spot. Does that make sense? I don’t really know how to explain it. But we are both really excited to see what she says!
