I chowed down on this deliciousness after my pool run on Friday. It hit the spot! I love bacon. I know that toast looks super burnt, but it’s actually a dark wheat….which I had never had before. It’s pretty good!

I did a thing on Friday…I got the new iPhone. I’m obsessed. It’s weird not having a home button anymore, but I kind of like it.

I got this case and when I got home, I realized the back looked like round pills. HA! I just liked the colors and the sparkle…typical. Anything sparkly and I’m hooked.

These are SO good. Chips/crackers of any kind are my weakness. I also really love balsamic vinegar. Win-win with these!

For lunch, I had a spinach salad with carrots, onion, nutritional yeast, and two salmon filets, all topped with a balsamic glaze. It was delicious, and very filling…I probably didn’t need both filets, but I just wanted them!

After lunch, I didn’t feel like doing any computer work, so I vacuumed and swiffered our entire house. I love this scent and now everything smells like lavender.

I couldn’t find Lu…she was passed out on the rug in our bathroom.

I got some new books! I am pumped to read “How Bad Do You Want It?”, especially after coming back from a long-term injury. I know it’s going to be hard for me to not push it; I don’t want to come back too hard, too quickly. I’m hoping that reading this book will help! I have heard all kinds of great things about “Run Fat. Eat Slow.” I cannot wait to try some of the recipes in here – I found two that we are going to have this coming week!

I spent about 30 minutes doing my PT exercises. Lu thought I was down on the floor to hang out with her. She has a weird obsession with yoga mats – as soon as I lay one on the floor, she plops herself down on it. Every. Single. Time.

Soooo, I got two flavors of those crackers. And I HAD to try both flavors on the same day, just to know if they were both any good. These were DELICIOUS. And may or may not be gone already…

I LOVE when my to-do list looks like this before the weekend! I was able to get started on some of my stuff for this week, which was nice.

For dinner on Friday I made seafood bowls. i think my all-time favorite meal is a bunch of random stuff thrown in a bowl. Anyone else feel this way? These had beets, brussles, lentils, yellow squash, shrimp, and scallops. They were SO good. I also had a glass of red wine, which was delicious, as well.

After dinner, we headed to my friend Katie’s house before we all went to a concert. I was pretty excited to see my second children. Katie has two of the sweetest dogs.

Katie and her boyfriend, Layne, have been trying to cook healthier. They made this delicious sausage and veggie bake – I loved it! I’m going to have to make it.

A puppy photo shoot is ALWAYS needed. I’ll spare you the millions of photos I took and just share these two. This is Katie’s new puppy, Birdie. She’s perfect.

I mean, come on! How adorable is she?? <3

From Katie’s, we all headed out to enjoy some live music!

These are some of the best people.

We made our way to the VERY front, so there was a lot of singing/dancing going on. We got SO hot, but it was such a blast.

I love The Mixtapes. So much. They’re a 90’s tribute band and they are SO good. So, so good.

Jake and I got up Saturday morning and went to B2 for breakfast. We both had the breakfast wrap.

This is how I spent my Saturday. For real. It was wonderful. Jake got out and did a 15-miler. While he did that, I knocked out some work on my study, but I never moved from the couch. Lu made herself a little bed on the pillows and Aspen was curled up in her chair. We loved our lazy Saturday.

Lunch was another bowl of random! Bacon, leftover veggies, deer sausage, beets, and lentils. So. Good.

Stillllll on the couch…I think I watched 8 episode of The Office. I didn’t hate it!

I really did enjoy lounging around all day.

Cuddles with our littlest babe.

For dinner, we called in Galloway and ate while we watched Bloodline. More lounging! It was the perfect rest day. I realized Saturday morning that I hadn’t had a day off, so Saturday became my rest day. There’s no better way to commit to a rest day than to lounge on the couch…right?

We accidentally slept in on Sunday…I think we slept for almost 11 hours! We must’ve needed it. Dayle, a reader, posted this DELICIOUS looking sweet potato chili on her Instagram Sunday morning. How amazing does it look?? YUM.

Around 10:30, I went to my parents’ house to get an elliptical workout in. They have this sweet set-up in their basement.

I got 5 miles in and I did a LOT of speed work, so it was a dang good workout. I was drenched when I finished. It felt SO good. I miss sprinting.

The treadmill next to me motivated me. I cannot wait to get a good treadmill run in. I know a lot of people don’t like the treadmill, but I don’t mind it at all! Any other treadmill lovers out there?

As I was leaving to go to my parents’, Jake was getting ready for his 10-miler. As I was coming back home, I saw him on the trail by our house, so I drove by and took creepy pictures.

Jake loves snow more than anyone I know. I was so bummed I couldn’t join him on this snow run (they’re my favorite). SOON.

Then it was home for the rest of our leftover sweet potato chili and a salad.

Aspen HATES snow and Lu LOVES it.

After lunch, we got groceries for the week. While we were at Mama Jean’s, we grabbed a Cold and Flu Shot. We love these!

Oh my gosh!! I saw this at the store. Do I need to try this? Has anyone had it before? Tell me your thoughts!

I LOVE green bananas. If my banana has a single spot on it, I won’t eat it. Every single banana at the store was green. I was ecstatic!

Here’s our grocery haul for the week! I need to get ingredients for stuffed peppers and a chickpea/chicken curry, but that’s it. We saw those golden beets and had never had them before. I’ll let you know if they taste any differently.

Some of our friends were at 4 By 4, so we went up there for a little bit before meeting both our parents at Galloway for dinner.

I went dirty and had wings last night. They just sounded SO good. Aren’t these massive??

After dinner, it was home to finish meal prep and relax! One tray of these veggies is for lunch and one is for breakfast.

Jake will have chicken with that “Everything But the Bagel” seasoning from Trader Joe’s for lunch this week.

While our food cooked, we watched an episode of Bloodline. We had a nice, relaxing weekend and I loved! We got a little bit of snow Saturday night/Sunday morning, and now it’s REALLY snowing here again. I went and did an hour of pool running this morning – I’m really proud of myself. I wasn’t sure if I was going to be able to get the whole hour in. Pool running can be SO boring, but as I was driving to the Y, I realized that my body can more than handle it, it’s my mind that’s going to want to stop. I decided that wasn’t going to happen and that I just needed to do it. So, I did! And it felt great. I listened to a podcast the WHOLE time, which I think helped. I have another physical therapy appointment today – I’ll call in a little bit to see if it’s still happening or not. The snow is REALLY coming down hard. I wish I had stuff to bake! I love baking when it’s snowing outside.
I hope everyone has a wonderful Monday!
I adore treadmill running. However, I decided this fall that I have to get outside more and have been really enjoying it too. I would love to hear more about pool running. How are you listening to a podcast without your phone getting wet while you are pool running?
Rebecca,
If I had to choose, I’d pick trail outside any day, but I kinda love the treadmill, too! It’s nice to have options! 🙂
I have wireless, bluetooth headphones and I found out that they’re water resistant – have the PowerBeats 3. Since my head stays out of the water the whole time that I pool run, I was able to set my phone on a bench by the pool and listen to the podcast the whole time. It was great!
I’d love to chat about pool running! I’m still learning about it, but so far, I’m enjoying it!
Have a great day!
