Lots and lots of food + this cookbook is the best + where should we go?!

Yesterday, after my RUN (still loving it), Jake wanted to take me out to breakfast before he left for work. So, we headed out the door and went to a place close to our house. They were supposed to open at 7, but they weren’t! We were bummed, but we had good stuff at the house to eat, so we headed back home and Jake made us an egg scramble and I did avocado toast. It ended up being super yummy.

After Jake left for work, I did a little bit of work on my computer, then I got started on the dinner I made for our Grandmas last night. We had Marathon Lasagna out of Run Fat. Eat Slow. and it was INCREDIBLE. You make mashed sweet potatoes, which gets added to the Ricotta Cheese. I’m serious, if you like to cook and enjoy meals that use whole foods, get this cookbook!

You also sauté spinach and put it on top of the Ricotta Cheese/sweet potato layer (as seen here).

YUM. The only thing I didn’t follow from the recipe (you know there always has to be something) was that I used Mozzarella Cheese Pearls instead of slices. No real reason why, I just bought the pearls and decided to use them!

After I got the lasagna put together, I checked in with the three online classes I’m teaching. I always love the first week of class when you’re getting to know all of the students – it’s fun! After I checked in with them, I had some of the random crockpot stuff for lunch. This wasn’t nearly as good the second time around…I don’t think seafood is ever good as leftovers.

Aspen is ALL legs and she always lays in the funniest positions. It cracks me up. I’m not even sure which leg is which in this picture…

I had some of these dark chocolate covered espresso beans while taking a break from my work, then I did an arm circuit, my 10-minute abs, and my physical therapy exercises. All while watching The Office, of course.

One of my exercises is sitting like this, turning my upper body toward the leg that my hand is on, then turning the other way, trying to get my glute on the ground. This works on hip flexibility/opening. It’s a good one!

I always have crazy, messy hair. I’ve just accepted it.

Another exercise starts from the same position as above, but holding a weight, I use my abs/glutes to lift myself up to a kind of kneeling position, then I slowly lower myself back down. I repeat that 10 times on both legs. You can actually feel the burn when you do these!

Kayla sent me this and told me that I was better at taking running selfies…as much as I appreciate the compliment, I reminded her that I wasn’t running when I took the picture of us on the treadmills and she was when she took this. You can see my excitement about running!

After my little workout, I had 3 interviews to conduct, which took about 3 hours. Then, our Grandmas came over for dinner! We had lasagna, a salad, and rolls. I love a colorful salad. They always have such good flavors! Anyone else love banana peppers in their salad? I think that’s my favorite salad topping!

I started to cut into this before I took a picture, but look at that deliciousness! Oh, I just remembered one other change from the recipe – I used brown rice noodles instead of regular noodles, but that was it! I think….

It turned out SUPER good.

I’m bummed this is blurry, but we had SO much fun with these two. I think they’re meeting for coffee this morning, too! I love it. These are our Moms’ Moms.

This handsome man and I sat in the kitchen talking after our Grandmas left, which was around 9, I think. The next thing we know, it’s a little after MIDNIGHT. We never stay up that late! I don’t know how we lost track of time for that long, but we went to bed as soon as we realized what time it was. I’m definitely a little sleepy this morning!

I’m sensing a pattern here. This cookbook is INCREDIBLE. I am SO impressed with everything I have made out of it so far. I can’t wait to try more! I’ll share each thing I make with you. And if you’ve made any recipes out of here, I’d love to hear about them!

We don’t really weekend plans, which is nice! Today is my rest day, so I’m going to lounge around and just do some computer work. We have dinner plans later with Kayla tonight, but that’s really it! My Mom and I are going to a barre class in the morning, then I think we will meet Jake and my Dad for breakfast after. Jake and I MIGHT head out of town Saturday afternoon, just for a little getaway, but we haven’t decided for sure yet. We will see!
