Weekend Wrap-up!

Breakfast Friday morning was my old egg and oatmeal concoction. I also added a banana, peanut butter and flax seed. So. Good.

I worked all morning on my computer, then took a break for lunch. I had a turkey burger, Sriracha lentil chips, and some mashed sweet potatoes. I love having those potatoes ready to just heat up for my meals. I need to keep these on hand more often!

I may or may not have worked from my bed for most of the day…I didn’t hate it! If I’m going to have a rest day, I’m going to really rest. So that’s just what I did! The girls loved it.

We had dinner plans with our friend, Kayla, so I showered and started to get ready, but my girls needed more cuddles.

I finally got dressed and we met Kayla at Galloway. Jake and I shared a BLT and a burger. Kayla and I both love the Deep Eddy’s grapefruit vodka, so we had that with water at dinner. It’s always so good!

We couldn’t decide what we wanted to do after dinner, so Kayla came back to our house and we played games for a little bit. Of course we had to play Watch ya Mouth – it’s always so funny!

The girls are obsessed with Kayla and wouldn’t leave her alone.

Jake made Old Fashioneds and they were phenomenal, like always. Anyone else have to have chapstick with them at all times? I do.

I busted out my lacrosse ball to work on some knots in my feet while we played games – multi-tasking helps me ignore the pain this tiny little ball causes.

I was looking forward to getting to run with Jake a little bit in the AM. I put our shoes by the vent in the kitchen so they would be nice and warm for us!

I wanted to knock out 3 miles, but my hamstring felt a little tight, so I stopped at 2.5 I wasn’t having the same sharp pain where the hamstring attaches to my sit bone, but I was still wanting to be careful. I didn’t like the tightness I was feeling, so I figured it was better to cut it a little short than push through some pain. Here’s my attempt at showing you 2.5…I’m just trying to be careful, as long as I don’t get that pain back, I’ll keep running.

After my run I did my physical therapy exercises and stretched. My hamstring was TIGHT.

We were going to breakfast with my parents later on Saturday morning, but I was hungry after my run, so I mixed these together and sipped on that.

After my run, my Mom and I went to a barre class at Physique Fitness.

Then we met my Dad and Jake and Brew Co for breakfast! Jake and I get free biscuits and gravy on Saturdays for being in the Mug Club. They have the BEST biscuits and gravy. Ever.

Then it was home to pack up the girls and hit the road for a little getaway! We wanted to go somewhere just for the night, so we decided on Eureka Springs, AR. We had planned to sleep in the camper shell on the beds that Jake built, but that didn’t end up working out, which was a bummer. We were told we weren’t allowed to sleep in our vehicle overnight. Oh well! We will just have to go camping another time soon!

We stopped at Mama Jean’s and grabbed a quick lunch for the road. We shared the Redbird, which has turkey, Sriracha, pepper Jack cheese, spinach, peppadews, and onions. It’s one of my favorites!

The girls LOVE when we roll the windows down for them on car trips.

When we first got to Eureka, we went to Black Bass Lake and walked the girls on some of the trails. It was SO nice outside.

The girls had a blast running around. We were the only ones on the trail, which was cool!

There were a bunch of little frozen waterfalls mixed in with the running water. It was so pretty. Being here made me REALLY want to do a trail run. If I could run trail for the rest of my life, I would be content. There’s just something special about trail running.

After Black Bass Lake, we went to Lake Leatherwood and drove around a little before grabbing dinner. I hadn’t been to Eureka Spring since I was 8 or 10, so I didn’t really remember anything about the town. Jake had been quite a bit more for mountain biking (he was a semi-pro racer when he was younger), so he was much more familiar with the town. While we were driving around, Kayla texted us and asked if we were out of town. We told her she should come join us, so she ended up coming down to Eureka for the evening!

We went to a new Mexican place and it was super good! It was called Aquarius Taqueria and it’s located on Main Street. They had thick tortilla chips, which we loved.

They make homemade blue corn tortillas, so we both tried those. I had a shrimp taco and a chicken taco. I liked them both, but the shrimp was definitely my favorite. Jake had steak and pork and liked them both.

I didn’t have my phone with me in the bathroom, so I had to go back and get this picture. It made me laugh! Lesson learned – ALWAYS have your phone. ; )

Here was our sweet set-up! The girls were back here while we ate dinner. We had all kinds of blankets and pillows for us to sleep on and it was SO comfortable. I’m bummed we didn’t get to sleep back here. On Saturday evening, we were told that it’s illegal to sleep in your vehicle overnight. If we would’ve known earlier, we would’ve gone back to Lake Leatherwood to camp. Oh well! Now we know for next time.

Kayla got to town shortly after we finished dinner! Her boyfriend was out of of town, and while we missed him, it was fun to have her join us!

We went to this new bar/restaurant called The Grotto. It was incredible. There was a little spring/cave area behind the bar. This picture doesn’t really do it justice. It was so pretty.

Our last stop of the night was at Chelsea’s Corner, a cool little bar that had a really good band playing. The lighting in this picture isn’t very good, but I was so excited!

We ate at this adorable little cafe Sunday morning. The food was yummy and the place itself was adorable.

They are known for their pancakes, so we had to get one! Holy cow. It was amazing. They add sour cream to the batter. So delicious! We had blueberries added to the pancake we ordered.

Then I had the Mud Muffin. It’s a homemade English muffin with egg, bacon, sausage, and veggies. It was delicious and the English muffin was SO good.

Our friend, Katie, loves gnomes, so when we saw this one, we had to send her a picture. She loved it!

We walked around town for a little bit, then drove out to the Crescent Hotel, which is supposed to be one of the most haunted hotels. You’re supposed to go to the 4th floor and take a picture through the stairway all the way to the bottom, so that’s what we did. Last summer, a man fell from here and died, which is so terrible. The hotel was built in 1886 and those banisters are not very tall at all. It gives me the heebie jeebies just looking at this.

Kayla snapped this picture of us wiping off the girls’ feet. They loved getting to go on some adventures and they have been sleeping ever since we got in the car to come home. They’re worn out!

After we walked around the Crescent, we went to Brews, which is a coffee shop/bar. I got a flight, which is my favorite way to sample different beers.

Then we sat outside, enjoying our drinks. Kayla and I got truffles, too. They were SUPER rich, but very good.

Then we decided to conquer the Razorback Observation Tower! I chose not to go to the top with Jake and Kayla, just because my hamstring was still a little tight and I didn’t think that would be the smartest move, so I stayed at the bottom and took pictures of them. It got SUPER windy, so I was kind of glad to still be on the ground.

For lunch we went to Chelsea’s Pizzeria. Holy cow. The pizza was INCREDIBLE. Some of the best I’ve ever had. We also had this delicious Greek salad.

We got a Luau pizza with Canadian bacon, pineapple, chicken, and jalapeños and a BBQ chicken pizza. YUM.

After lunch, we headed for home. We were all pretty worn out from a fun weekend. When we got home, Jake and I took a nap, then got to work on unpacking. For dinner, we had leftover Marathon Lasagna from Run Fast. Eat Slow. A salad didn’t sound good to me, so I skipped out on that. The lasagna is still delicious as leftovers!

I’m going to run later today, then I’m going to meal prep for the week! I also have some computer things I need to get finished and I need to schedule a few more interviews. I really need to get started on another round of data analysis, so that’s my big goal for the week. I REALLY want to finish this dissertation and graduate in May before we get married. We will see! Jake and I have evaluations for a new Performance Program we are starting. I’m excited! I’m hoping it’ll help my hamstring continue to recover, while also building some much needed strength for my training. I’ll share more about this once we get started! I think I need to schedule a few more physical therapy sessions, but we will see how today goes.

    I had no idea that there were any rules or laws against living/sleeping in your vehicle. I guess I have no idea how in the world any one can tell you that you can’t sleep in your car. Where did you guys end up staying? Or did you drive home on Saturday night? I ended up driving up to Chicago on Saturday. It was a quick trip but I honestly enjoy going for long drives sometimes just to think. I guess that’s why I am a distance runner … I need the time to think.

      I know! We were both kind of shocked, but I’m assuming it’s because they had camping areas close by. Oh well! We ended up getting a room in town.
      Oh, I love Chicago! That sounds fun. You’re so right – we are alone with our thoughts a lot, so it makes sense that we like that!
