The last of the deformed breakfast burritos…I have to be honest – I was pretty sad about these being gone. We will have to have them again within the next few weeks! Maybe the more I make them, the better I will get at rolling them up…

Then it was off to the Y to run! Remember how I said I would have to remind myself how much not running SUCKED on the days when I don’t want to run? Well, yesterday was one of those days. I was just not feeling it. My hamstring was a little tight, so I just did 2 on the treadmill and called it a day. I definitely felt better after I got my run in, but it was a struggle to make myself do it. My attempt at a treadmill selfie…

Then it was off to the store to get groceries. It was a 5 bags of groceries kind of day! I am officially obsessed with Lucky’s, a new market we just got here in town. The only complaint I have – they have small Sriracha bottles…We need the big ones!

Here’s the recipe and nutrition for the egg muffins I made yesterday! I baked them at 400 for about 20-25 minutes – just wait until the egg is cooked through and they are firm.

I LOVE this spaghetti squash casserole – it’s so easy to throw together and it’s good hot or cold! Jake has to eat his lunches cold, so I try to send things that will still taste good cold.

I finally got to run with my girls again!! I cannot tell you how amazing this was – 4 miles of catching up and running…there’s nothing better! Nashville, we are coming for ya!

I have computer work to do today, an interview with another participant, and then we are going to an event at Brew Co this evening! I’m feeling very ready to be finished with my study…anyone want to finish writing it for me? ; )
