Bittersweet + new training plan + wine & cursive!

I usually drink my coffee black, but after my first cup yesterday, I was craving something different. I decided to make some Bulletproof coffee. Here is what it looks like – yum!

I put MCT Oil, a little vanilla bean Ghee, and some collagen in the coffee, then blended it all together!

After I sipped on coffee and got some computer work finished, I took a break and had breakfast. I shared the recipe for these egg muffins on Tuesday, but I am SO glad I added goat cheese to them. They’re so yummy.

Welp, it’s official. This is still bittersweet for me – I was SO excited to do the full (my first) with my friend Jyssica (it’s also going to be her first). I know dropping to the half is what it BEST for my body right now as it continues to heal. There will always be races. And, it’s been SO amazing watching Jyssica and Kayla (who is doing her first half) absolutely crush their training. They inspire me every single day! I’m blessed to have such good friends to run with. If you’re in the area and want to run with us, let me know! We’d love to have you! I can’t wait for our friend, Jordan, to move back here so she can run with us, too!

I actually met with my coach yesterday afternoon to talk about goals and how to come back from this injury in a healthy way. We came up with two goals – the first, get to the start line healthy and mentally stronger. The second, run a sub 1:49, which would be a PR for me. I am focusing on Goal 1 for right now, but Goal 2 would be awesome – I start my training plan this Saturday!

Lunch was spaghetti squash casserole. As soon as this finished baking, I portioned it out. I made two batches, so we have lots of this goodness. Making two batches made enough for both of us this week, plus an additional 5 servings, which I put in the freezer.

After lunch I did my stretches and some band work.

I met my coach to go over my plan, then Jake and I met his Mom, Penny, for dinner! We went to Cesar’s, which is one of my favorite Mexican places here in town. They have the BEST sangria.

I got two tacos (sans tortillas) with chicken and pork. They have a taco that has pineapple mixed with pork (al pastor), it’s amazing. I always get it!

We also got a Pupusa to share. It’s a thick tortilla stuffed with cheese and meat. It’s amazing and it’s made right when you order it!

We worked on finalizing the guest list for our reception after we ate dinner. We had gotten this bottle of wine awhile ago, so we finally opened it – it’s super good! It’s aged in rum barrels. So we sipped on wine and finished up some wedding planning – our wedding is May 26th, and for the most part, I think we are finished with everything!

When we finished with the guest list, we somehow started talking about cursive. I, like any girl, just wrote my name all over the page, then started practicing with my new last name, which will be Bradley. Jake practiced his ABCs in cursive. It took both of us to remember a couple of the strokes, but we managed to remember them all!

I guess I need to remind myself of this whenever I get down about this dissertation – at least I’m not taking classes anymore! I will literally never have homework again and I am SO close to getting this dissertation finished. I’ve been kind of down on myself the past two weeks because I’m just not finishing the things I would like to finish. Then I remind myself that I’m not even finished with data collection yet, so I can’t really finish my last two chapters until that happens. I’ve been giving myself some tough love over here – Chill out and get it done!

How is it February?! Wow. I honestly can’t believe it. We slept in a little this morning, the
n I started doing some planning. I needed my big mug of coffee this morning! Anyone else love lounging in their robe or is it just me?

I have my LAST first interview today! Eek! I can’t believe it. When I am completely finished, I will have conducted 39 interviews. I know that doesn’t sound like a lot, but each is 30-60 minutes long and then I transcribe them…It’s been a lot of work, but I’m honestly enjoying it! It’s been so fun to get to know students this way.

    Just the other day at work, I was thinking about how I never use cursive handwriting. So I attempted to write some and it felt so awkward! 🙂

      Isn’t it SO awkward?! I have never been good at writing in cursive, I do kind of a mixture between print and cursive. I’m glad I’m not alone! 🙂

    Cursive is not something I use regularly. I am glad that I have the ability to write in cursive though. The state of IL is beginning to require that cursive is still taught in schools, so that’s a move in the right direction at least.

      I don’t use it very often, either! I’m not good at it at all…I’m glad they’re still teaching it! We don’t teach it here in MO…I think we should!

    19 Crimes is good! Did you know they have an app and if you point your phone towards the label, the person on the bottle will “come to life” and tell you what their crime was?! It’s super cool!!!!
