Weekend Wrap-up!

I wasn’t feeling steel cut oats on Friday morning. I really like to get some veggies in with breakfast, so I made an egg scramble with beets, onion, and spinach. It was delicious! I also had a flaxseed and quinoa waffle with PB.

I worked on finishing up my first round of data analysis most of the morning on Friday. I took a little break for lunch. I had some leftover sweet potatoes and asparagus in one of those yummy green chili tortillas I got last week – it was delicious! I am still obsessed wit Nut Thins. They were on sale at Lucky’s last week, too – win-win!

Lu was sleeping in the strangest position ever – it’s hard to see in this picture, but her nose is in-between the mattress and the headboard.

Lots of foam rolling happened on Friday. I realized I hadn’t had a rest day yet – I ran Monday and was really only supposed to run Tuesday and Thursday (I didn’t get my plan until Tuesday), so I ended up using Friday a recovery day – I did my stretches and foam rolled.

I got this new yogurt to try…it’s different. I don’t think I’ll get it again. It’s good, but it’s not my favorite.

My parents sent me this picture – they’ve been in Jamaica with my grandparents for the past 10 days. SO jealous!

Jake and I headed to Pizza House for dinner Friday evening. It was yummy!

Then we headed to Cassie and Nick’s house for the opening ceremonies of the Olympics! We have a group a three couples, and each person represents a country. We picked the top 6 from the last Olympics, minus the USA.

We watched some of the ceremonies, then started on our first event – basketball, but I think we were calling it Head Ball.

Our second event was Quarters. Canada came out victorious! So proud! She also kind of looked like an adorable lumberjack, so we made her pretend to chop wood, too.

Jake and I were the first opponents to go for the gold in beer pong, which was our last event of the evening. He beat me. Pretty badly.

We stayed up a little later than usual at our Olympics party, so we both slept in on Saturday. It was SO nice. We woke up around 8, then laid in bed with the girls and sipped on coffee. I think we need to do that WAY more often, even though we both like to run first thing in the AM.

Since we didn’t start our run until around 11, I was hungry! I didn’t want to eat anything heavy, but I needed a little something in my stomach. PB and cereal hit the spot!

4 layers for this run! It was cold and starting to sleet. Our weather was calling for lots of ice, so we hoped we were starting early enough to miss most of it.

This run actually went really well! We did 7 miles, which was my longest distance since November. This picture is at mile 5. Jake needed a bathroom break, so I took that time to document the ice! There were a few spots that were slick, but nothing too awful.

At one point, we were getting ready to run through a tunnel under a street pretty close to our house. We were talking and didn’t realize that the entrance to the tunnel, which is downhill, was pretty slick. We bot lost our footing. Jake managed to just kind of skate to a stop in the tunnel and I grabbed onto the wall of the tunnel and kind of flung my body against the inner wall of the tunnel – ha! It made us both laugh, but it reminded us to be careful. Check out Jake’s beard and his Julbos (glasses) in this picture – they’re iced over!

It felt so nice to run for longer than 4 miles. My legs definitely got tired around 6.5, but I haven’t ran more than 5 since November, so I kind of expected that!

After our runs, we were starving! We headed to Brew Co for lunch. I had this deliciousness.

Before dinner on Saturday, we went to 4 By 4 Brewing Co for a beer. We love this place! We went to Galloway for dinner, and I totally forgot to take a picture of my dinner. I had nachos and they were delicious.

Sunday morning, we headed to Lucky’s to get groceries for the week. We also picked up breakfast while there!

I need to take burrito rolling lessons from whoever rolled this burrito. It was perfect!

On Sunday afternoon, Jake and I hosted the second Olympics party. We made snacks (the picture below of French bread, topped with an apple slice, goat cheese, and a jalapeño slice). They were SO good. We also had three events for each country to participate in – darts, car racing, and putting together a puzzle. I failed to get pictures of the darts and car racing, but we got all the activities at the dollar store and it was super fun!

We added some Mardi Gras beads, for good measure. Also, while I took a short nap on Saturday, Jake put up all my Valentine’s Day decorations! He’s the best.

All the food! Cassie and Nick made delicious cookies – I think they were called Norwegian Cinnamon Thumb Cookies. Ryan and Sam made homemade pretzels – which were incredible.

Our final event = puzzles! This was so much fun and kind of stressful! Sam killed ALL of us. I think it took her maybe 3 minutes. MAYBE. Here’s my puzzle before I got started.

Has anyone else had this happen or do they have any ideas? This is from my watch band. The top spot was where it started. I then moved the watch down, and the bottom swollen part started. It’s painful! I took my watch off and took some allergy medicine. Fingers crossed that helps!

Jake and I grabbed Jimmy John’s for dinner last night. Unfortunately, I think it’ll be my last time eating there, which bums me out. The past three times I’ve had Jimmy Johns, all different locations AND different sandwiches, my stomach gets SO upset. I had the veggie club, plus hot peppers last night and the same thing happened. BOO.

On the schedule for today: data analysis, data analysis, and MORE data analysis! I’m going to take a break this afternoon to go to the Y to do the elliptical, but other than that, it’s going to be a computer work today – I think most of this week will be that way.
