We made breakfast casserole in the crockpot again for breakfast this week – it’s such a time saver! We added a sweet potato, an onion, mushrooms, two jalapeños, sausage, 16 eggs, and almond/coconut milk. We let the whole mixture cook on low overnight, then it’s ready to go when we wake up!
Sorry for the TMI, but here’s a glimpse into the life of people who LOVE spicy food. And yes, we call each other buddy…I’m not sure how that started. I’ll ask Jake!
I found this old coffee mug that I made like 6 years ago at Firehouse Pottery. I had so much fun making this…maybe I need to go again! I was excited because I thought I had gotten rid of it. It was the perfect size for my lunch smoothie.
I love adding this to my smoothies. Sometimes I even just mix it with chocolate milk – it’s pretty yummy! Also, anything chocolate? Count me in.
I was craving chocolate yesterday – this helped!
All this goodness ready to be blended! This smoothie had spinach, frozen blueberries, half a frozen banana, protein powder, cacao powder, collagen, MCT Oil, green superfoods powder, peanut butter, turmeric, water, and ice! It was delicious.
Anyone else love a good smoothie for lunch?? YUM.
I ended up not doing the elliptical yesterday. I got caught up trying to grade a bunch of assignments in the online classes I’m teaching. The grading ended up taking most of the day, and since I was already working on online class stuff, I figured I’d might as well work ahead and get the next few weeks ready to go. So now all I need to do for the next few weeks is check-in with my students and stay on top of grading. I decided I needed to get some yoga in, so I went to Sumits yesterday at 4P. I don’t really enjoy non-heated yoga, so I typically only go to heated classes. I got ready for yoga, then decided I needed a snack, so I sat in bed, watching Friends, and enjoyed a snack.
Cereal, dark chocolate covered almonds, and some crystalized ginger. Mmm.
That was seriously the hardest yoga class I’ve ever done. I was absolutely dead. I tried to get a picture of how sweaty I was, but you can’t tell. I was SO worn out afterward. Dang. I haven’t been to yoga in a few weeks, so I’m sure that’s part of it, but that class kicked my butt! I loved it, but it definitely hurt.
Then it was home to start on dinner! We had burgers last night – I made the patties with ground turkey, ground lamb, and shredded zucchini. I also threw in some garlic, onion, and an egg. I love adding shredded veggies to burger patties – it’s such an easy way to get some veggies into your diet, plus, they add some great flavor.
Not the prettiest picture, but this was SO good. While the burgers were baking, I threw some brussles in the AirFryer. I had also picked up some couscous and tabouleh from Lucky’s salad bar on Sunday, so we had that with our burgers and brussels. I topped our burgers with cranberry goat cheese and jalapeños – they were the bomb.
Lulu is literally lying upside down on Jake. She sure does love him.
Does anyone else do this?? I got up at 4:30 with the intention of running, but just didn’t feel like running in the dark. I love running first thing in the AM, but sometimes I just want to wait for the sun to come up! So, that’s what I did. I sipped on coffee and started some computer work, but I decided I was going to wait and run once I could enjoy some sunshine. I am much more productive throughout the day if I get up early, so I wasn’t going to go back to bed, but I just really didn’t want to run in the dark.
What’s your favorite time to run??
Since I didn’t get to my data analysis yesterday, which is just fine, I needed to knock out some work in my online courses, that’s on my to-do list for today…and the rest of the week. I’m going to run as soon as the sun comes up, then I’ll get started on analysis!
Oh, and thank you for your kind words about my watch/wrist – it’s already getting MUCH better! I left my watch off Sunday and Monday, so I think that helped. I’m wearing it again today, with a different band, so we will see! <3
