I slept in until 7 again yesterday. I love sleeping in lately! Maybe because it’s cold and dark right now and I just don’t feel like doing much before the sun comes up. I’m definitely VERY ready for daylight savings…I like when it gets brighter earlier. But until then, I’m going to enjoy sleeping in a little! I guess I better soak it up until I have a full-time again, too. Since I wasn’t running, I got to have Sriracha on my breakfast! It’s amazing how much better things are with a little Sriracha.

Sometimes you just can’t leave your coffee at home, but it seemed like a lot of work to get a to-go coffee cup. Plus, I kinda like drinking out of my mug in the car…at least until I need to change the radio station…

I went to HealthTracks, which is going super great. I love the individualized plans we get and I think my hamstring is continuing to improve. When I got home, I had another rice cake with chocolate PB and more coffee, then I got started working on some edits from my editor. I worked until lunch time, then took a break to eat. More Greek yogurt chicken salad and my favorite brussels. Mmmm.

We had been using flannel sheets, but I just can’t anymore. They make me WAY too hot at night. I put some new sheets on our bed and washed these. I bragged about being able to fold a fitted sheet on Instagram…keep scrolling.

But I didn’t, because I don’t know how. It’s impossible. I just always end up wrapping them up in a little ball and shoving them into the plastic sheet holder – no clue what they’re really called! And yes, I have watched the YouTube videos on folding a fitted sheet and I still can’t. Any advice would be much appreciated!

Then I had yogurt and carrots as a snack.

How I felt about sitting in front of my computer all day…I don’t want to complain, but sometimes it just gets REALLY old being stuck to a chair ALL dang day. It’s a lot better when I can knock out a long run beforehand, but if I don’t do much, I get pretty antsy.

This is why having an editor is SO wonderful – please excuse my chicken scratch, I was writing quickly, but these are all references I need to double check or add to my reference list. That’s awful! Using an editor was definitely the best thing I’ve ever done! I know I’ve said that before, but man, she’s SO helpful.

Jake called on his way home from work. I was feeling grumpy and told him I didn’t want to cook anything, but that nothing sounded good. I told him we had food to cook, but that cooking was the last thing I wanted to do – I was basically being a big baby. I think I was worn out from doing nothing all day, if that makes sense. He of course offered to cook or take me to dinner, because he’s the best, but I knew if we went out, I’d be bothered that the food we had would go to waste. So, I put my big girl pants on and threw together something for dinner. We were supposed to have a kale salad with salmon, but it’s so cold and gross here, that salad just did not sound appealing. I figured I’d try something new! Jake got home right as I started dinner. He just looked at me and laughed – he gets me! So, our impromptu dinner was lemon salmon with this Primal Palate seasoning – which was delicious.

And instead of a kale salad, I sautéed kale and onion in EVOO, added quinoa and cashews, let it all cook together, and called it quits. Holy yum. It turned out delicious and was perfect for what I was craving last night. I add a little full-fat butter to quinoa whenever I make it, it really makes the flavor pop. So dinner last ended up being super delicious and nutritious, despite my pouting about not wanting to do anything.

Then we had more Skratch bars for dessert. These are SO dang good.

Lu set her toy down and then stared at me for a solid 20 minutes.

I get headaches if I have my hair up in a ponytail whenever it’s long, but it drives me crazy to have it down, so I usually braid it or pull it back in a loose pony. I’ve been using THESE and I love them! Here’s one in my hair.

I’m finishing up edits on chapters 1 and 2 today! Then I’ll send them off to my committee to read. While they’re reading, I’ll edit chapter 3 and start writing chapter 5. I should get my edits for chapter 4 back in a few weeks, so I have a little bit of time before I send chapter 5 (my FINAL chapter) to my editor. I hope you could follow that! ; )
I’m also going to get a run in here in a little bit – probably on the treadmill because it’s only 3 and it’s cold outside.

Hey Chelsea, I’ve been reading your blog ever since I saw your accomplishment on Hungry Runner Girl. I love your authenticity and even though you might not believe it, you are inspiring people to show up and keep going through adversity, through bad days, through lack of motivation. Seeing you chase down your goals and work towards your PhD is inspiring to me as I want to do a Phd (in learning design and online learning) and I’m a frustrated runner who has had health issues over the past two years that has kept me from getting back to running.
