Kayla needed 3 miles yesterday and I wanted 6. I ran 2 on my own, met her for her 3, then I ran home. It was perfect! We also got to see the sunrise. It was beautiful. Have I mentioned how much I’m loving being able to run??? Injuries really make you appreciate your health. I’m still being careful, but heck yeah to being able to run!

It wasn’t all that cold during my run, but I just couldn’t get warm after. I threw on some sweat pants and stole one of Jake’s long sleeved shirts. It helped!

Breakfast this week has been two over-easy eggs and some sautéed veggies. I love putting nutritional yeast on the veggies – it’s so delicious.

I was still hungry after my run, so I had some cereal and coffee with almond milk and collagen.

I love looking back on these memories. I can’t wait for the moment I’m looking back on GRADUATION pictures. Don’t get me wrong, I am so thankful I CHOSE to do this and that it has even been a possibility. I mean, Jake let me completely quit my job so I could finish, so that in itself means more than I can even express. (Yes, he’s the absolute BEST). I am just SUPER ready for graduation and to move on in my career.

Lunch yesterday was a smoothie, which I sipped on while I worked. I finished ALL edits for chapter 5 yesterday! That sure felt good. Now to get edits for chapters 1, 2, and 3 back from the head of my committee and send her chapters 4 and 5. The actual editor I have been working with helped me with word choice, verb agreement, and APA formatting. My committee head (who is also my advisor) checks for holes in my research and makes sure everything fits together and meets all the dissertation requirements. It is nice to have multiple sets of eyes searching for different things!

I did a little midweek meal prep for Jake’s lunches. I made him pineapple chicken and rice. I didn’t have any butter, so I mixed this Daiya in with the cooked rice, keeping my fingers crossed that it wouldn’t ruin it. Holy heck it’s delicious!! Guys, try this.

I know it looks AWFUL, but it tastes super good! And it was SO easy. I cut up three chicken breasts, dumped a can of pineapple over the chunks, and cooked it all at 350 for 50 minutes. That’s it!

I have been sending this popcorn with Jake for his lunches because I can’t stop eating it…it’s just SO good.

Jake and I went to Missouri Spirits for dinner and shared these nachos. They were SO delicious.

Here’s a clue as to what I’m doing later today!! Any guesses? My friend, Cassie, and I are spending the day together. I’ll share all about it on the blog tomorrow!

Kayla came over to hang out last night. She needed her nails soaked off, but didn’t have time to go to the nail salon. We did it ourselves! I had just gotten mine done, so I wore gloves to protect them. It was hysterical, but we got it done!

I’m off to get a little run in before I meet Cassie! I can’t wait for our girls’ day!
