Lunch on Friday was more of this deliciousness – rice, pineapple chicken, and ALL the brussels. I cook these brussels with honey and balsamic vinegar. It’s seriously SO tasty.
This is officially my new favorite yogurt flavor. It is AMAZING.
Friday evening, some of my girlfriends and I headed out to the fair grounds for the first night of the Rock’n Ribs BBQ Festival. We were pretty excited to be all together. Beer and free food? Sign us up.
There wasn’t a ton of BBQ sampling, and we were hungry, so we grabbed something from the fair vendors. I hadn’t had a corndog in WAY too long. Holy cow it was SO good. I loved every second of this dinner.

Saturday morning was the last longish run before my Nashville half! I sipped on some coffee and then met Jordan for an 8-miler. Kayla needed 4, so I sent her the route I made, and Jordan and I picked her up at the halfway mark. It worked out perfectly!
After our run, we all headed to Mama Jean’s to get cold and flu shots. We aren’t taking any chances on getting sick before we leave!
I was starving, so I went straight home and made breakfast. I used up the rest of the brussels, which I was way too excited about. They were super delicious mixed with mushrooms. I’m on an English Muffin kick right now…I couldn’t decide if I wanted jelly or PB and honey, so I had both.
I had a yoga workshop in the afternoon with Jyssica (my other running buddy), so Jake and I grabbed a quick lunch before that. He was craving Mexican, so we went to La Paloma. I got one chicken taco because I didn’t think it would bother my stomach during yoga (it didn’t), but then I basically ate my body weight in chips and salsa….not the best choice before a hot yoga class.
I failed to get a picture of us after yoga (Jyss did an INCREDIBLE job!!), but we all headed out for dinner after. We went to Arris and had pizza. I got a huge one and took the rest home to Jake for his dinner.

It was such a dreary day on Sunday…I rocked my brightest shoes to try and brighten things up.
I also realized that my nails matched my shoes…
Kayla picked me up Sunday morning and we went to Target, grabbed breakfast, and did our grocery shopping together. We both had quiche at The Press and it was SO dang good. I think I could’ve eaten 3 pieces. I had another immunity boosting shot, too.

I wanted to bake yesterday, so I made zucchini bread! I decided to branch out and try a new recipe for the bread – this one isn’t as healthy as the one I normally make, but it turned out SUPER good.

This is the recipe I followed! I didn’t use all the sugar, which I think was a good decision. The bread is pretty sweet and I only used about a cup of sugar, maybe a cup and a half.
I don’t typically portion out my lunches during the week since I’m at home, but I went ahead and did it for this week. Here’s what I’m having! Roasted veggies (broccoli, cauliflower, carrots, beets, and onion) and chicken with Everything But the Bagel Seasoning .
After I prepped my lunches, I started on Jake’s and snacked on some of our new hummus. It’s DELICIOUS.
I also made some trail mix to take with us on the road when we leave Thursday. This has almonds, peanuts, dried mango (that I cut up), yogurt covered raisins, and sunflower seeds.
I had an orange in the car as a snack, too. We found these new oranges at Lucky’s and they are SO good. They’re in the organic section.
This picture popped up on my Timehop from two years ago. We hadn’t been dating all that long! A day or two after this was taken, I remember sending a screenshot of the screen of my phone to show Jake that this picture was my background. I think I asked him if it was too soon for me to do that, kind of joking, but also probably worried I was going to freak him out. His response was just a picture of his own phone, with the same picture. <3
Jake got home from his mountain bike event and we had some fresh zucchini bread, right out of the oven. It is almost like a dessert! (I added dark chocolate chips to mine – you know I can’t follow a recipe 100%)!
White-out tape is one of my favorite things ever. I used this ALL the time when I was a classroom teacher. My students loved it, too. The nerd in me got WAY too excited when this package came yesterday.
Jake and I met my parents at Galloway for dinner last night. My Mom and I shared the BLT. I was craving it all day!
Lu hides under our bed and Jake likes to trick her into thinking he isn’t in the room. When she comes out, he tries to grab her. My poor baby. At least she’s fast and can get back under the bed in about .2 seconds.
I have lots of computer work on my to-do list for today! I would love to get a little ahead before we leave for Nashville. I’ll probably wait and run all my errands on Thursday morning, that way I can really focus on dissertation stuff and wrapping up the two courses I’m teaching this semester.
I ended up sleeping in today, so I’ll go run later this afternoon. I need to look at the weather. I might run on the treadmill. I haven’t been on one in awhile and I kinda miss it. I know that’s probably weird.
I am getting super excited for Nashville! Since I’m just going to run, there’s no pressure to hit a certain PR or anything like that – I’ll get to enjoy the whole process. I also can’t wait to cheer on Jyssica and Kayla. It’s going to be a super fun weekend!
