All the food + Taco Tuesday!

I needed a mid-morning snack yesterday, so I had a rice cake with PB and honey. I love this snack with my coffee.

Then it was lunch time! I attempted to make healthy salmon cakes. I didn’t want to go to the grocery store to get anything, so I just added an egg to some salmon and chopped up jalapeƱo. They kind of fell apart, but they still tasted super good. I topped the patties with black garlic hummus and Sriracha kimchi. I ate the rest of our sweet potato chip leftovers and roasted some butternut squash.

After lunch, I got my hair cut! Christine, who has done my hair for 5 or 6 years, always does a great job. When I was coloring my hair, she always knew exactly what to do. I don’t color my hair anymore (mostly because I’m lazy and didn’t want to keep up with it), but I always leave the salon feeling so much better. She cut off about 3 or 4 inches and my hair feels SO much better! Thank you, Christine!

After my haircut it was home, change into sweats, and have a snack. I had Sriracha hummus, Nut Thins, pepper slices, and pineapple.

Thennnn I needed something sweet. I ate some of the trail mix I made for our traveling last weekend and a piece of this chocolate.

Jake got home from work, we changed, and hit the pavement! We rode our bikes to downtown to meet up with a group for a Taco Tuesday ride at Missouri Spirits.

When we got home from Nashville this past Sunday night, there was a package on our front step with all kinds of goodies from Club Ride! I didn’t have any chamois to wear on my bike and on longer rides, I could definitely feel it! Jake got me two pairs of chamois, some shorts, the tank in this picture, and a super cute baseball long-sleeved tech shirt. I was PUMPED.

Look who met us there! Kayla and her man, Wade! Kayla got a massive blister during our half over the weekend – it looks SO painful! So she hasn’t been running. She said riding her bike around made her legs feel a million times better.

Missouri Spirits has the BEST blackberry mules – we both had one and then HAD to get a second one because they’re just that delicious.

After our ride with the group (12ish miles), we hit up the taco bar! I skipped the tortillas so I could chow down on lots of chips (my weakness).

After dinner, we rode back home! The downtown area is about 8 miles from our house. We took a short cut on the way home, just to stay in a lit area, so we ended up with a little over 26 miles, which was my longest ride ever!

We both rode our mountain bikes, ha! I just love my mountain bike, so it’s what I would always rather ride.

This made me laugh – one year ago today, Kayla, Jake, and I went on another Taco Tuesday ride…I think we need to do these more than once a year…

I am working on edits ALL day – I have a lot I need to do for chapter 3. I need to reorganize part of that chapter, which is almost harder than re-writing. Oh well! I’d love to knock out most of the edits today. I’m gone again this weekend (for my bachelorette party!!!!), so I want to get as much finished before I leave.

We are having a BBQ tonight, so I am looking forward to that!
