A legit meal prep Monday + my plant babies + this is why you shouldn’t stop lifting…

Monday was the last day of this breakfast! I prepped an egg and veggie casserole for the rest of the week. Jake and I met Kayla to run early Monday morning. After our run, Kayla and I went to the Y to start lifting again. We were both hungry, so we ate a quick breakfast before I picked her up. I inhaled this!

Teaching online classes can be hard. This semester was difficult at times as I balanced teaching three online college courses and working on my dissertation. It helps to get emails like this occasionally!

Also, my dissertation is all about fostering online community…this student doesn’t know that. How cool!

We both have wanted to start lifting more consistently, so we made lifting plans and headed to the gym after our run. I was laughing at Kayla’s face in this picture, but then I looked at my own face in the mirror during a squat…Kayla looks a TRILLION times better than I do. I’m excited for us to keep lifting together – right now, our goal is to lift twice a week. We are both pretty sore from yesterday…

After legs, arms, and abs, we did ALL the stretching. Kayla teaches yoga, so she made me do a couple of moves to stretch some problem areas in my legs. I’m glad she’s so smart. (And pretty). I’m the worst stretcher on the planet…

This popped up on my Timehop yesterday – my very first teaching and coaching job! Alyssa, who I coached under, just had a baby, and he is the most handsome little guy I’ve ever seen! <3

When Kayla and I finished lifting yesterday, we went to the grocery store together then ran into Target. I saw this at Target and HAD to get it. This is my life!

I was STARVING by the time I got home, so I chowed down on some leftovers, then got started on a little meal prep. I ate leftover Sloppy Joe stuff on top of quinoa and had peppers with hummus.

I cooked chicken while I ate lunch, then I made sweet potato fries. Jake is having a healthy  chicken salad and fries for his lunches this week.

I roasted some veggies and threw together my own lunches. Chicken, broccoli, squash, and onion.

I wanted something cold for dinner, since it was hot outside. I cooked more chicken for our dinner and let it chill in the fridge until Jake got home. I worked on my computer a little bit when I finished cooking. Before we ate, Jake picked me up and we ran to Lowe’s to get top soil for our flower bed. Jake spread all the top soil while I threw together dinner.

We had a citrus salad with chicken. ​I made an orange dressing for it and it was super good! 3/4 cup OJ, 1 T mustard, 2 T balsamic vinegar, and 2 t honey.

After we ate, we went back to Lowe’s to pick up a few plants. I was pumped!

We also got a new table and chairs for our front porch. They match our front door! That’s Clyde in the corner – Jake got him from a family member a long time ago.

We worked on the flower bed until about 9 PM, then Jake went into work for a little bit. I can never sleep when he’s gone and he got home around 11:30 last night, so it was hard for both of us to get up this morning. But we did it and knocked out a 6-miler. Holy cow, I am SO sore. Like, ridiculously sore. This is why you shouldn’t stop lifting! Woof. Our run was HARD this morning.

After our run, we sat at our new table and sipped coffee. I’m pretty excited about marrying this guy later this month.

Then it was breakfast time! This casserole might be one of our favorites. It’s about 16-18 eggs, almond milk (maybe 3/4 cup?), tomatoes, onion, spinach, and mushrooms. That’s it!

I have to take the girls to the vet later to get them all caught up on their shots since we are boarding them when we go to Colorado for our WEDDING. Aspen HATES the vet, so we will see how that goes. Wish me luck! After that, I need to stretch, take an Epsom salt bath, stretch, do some computer work, then stretch again. I am SO sore. It’s been a long time since I was this sore. I will also drink ALL of the water today. All of it.

    YAY! Its wedding month. Do you think anything will change after you guys get married? I wouldn’t think so but definitely would be interested in knowing your thoughts. Also, I have been so jealous of all of your outdoor biking. I wish I had more time to bike outside but its too dark in the AM when I workout and after work I am just exhausted. Wish I had a flexible schedule like yours. 🙂
