Meal prep Monday + oops + back to the grind!

Monday felt like the longest day EVER. With all of our trips recently and our wedding, I think time has just been going by super quickly. Now that it’s back to reality, things are starting to slow down. A little. We have our reception this weekend, so that will be a blast! After that, it’s time to focus on finishing my dissertation. As of now, I SHOULD be finished at the end of August. Then I will just wait for graduation in December!! I don’t know what I’m going to do with all of that free-time. I get giddy every time I think about it. I have a lot to do between now and then, but I am SO ready.

I start my marathon training plan in two weeks, so I’m trying to get used to that schedule. I don’t like not running on Mondays, but I’m only going to run 4 times a week, as least at the beginning. So, I’m going to take Mondays, Wednesdays, and Fridays off from running. I will do cross-training on those days, so I’m excited to see how that helps my training.

​I had this for breakfast yesterday then I headed to a barre class at Physique.

I got THIS tank from Lululemon and I love it! You can’t tell in this picture, but if you go to the site I linked, you can see how it ties up in the back. You can also just leave it open. I love it both ways!

After barre, I headed to the grocery store. Can you tell I haven’t meal prepped in a few weeks?? We were out of almost everything!

I also realized my shirt was on inside out. At least you can’t really tell…can you? Just say no. ; )

It may not look empty to you, but it was. We literally had zero food in our fridge, just some leftovers from when we grilled the other night.

I was hungry after barre and knew that I wouldn’t have lunch cooked in time to eat it yesterday, so I grabbed some yummy stuff from Lucky’s. Tofu steaks and some delicious sides. It was all super good!

Then I started on meal prep. Luckily, when Jake grilled the other night, he made enough turkey burger patties to last him almost the rest of this week. I made him some sides – roasted zucchini, mushrooms, and onion, and some sweet potato bites. I also portioned everything out, so all we have to do it grab it and go!

Jake loves cucumbers, so I made a Greek yogurt dip to send with him so he can dip them. He doesn’t know about it yet! I think he will love it. Is it weird to get excited about lunch surprises? Probably. But if you’ve been reading for awhile, you already know I’m a weirdo, so you’re used to it!

I took a break from meal prep to have a snack.

Then I made some protein balls. I need your help – I want a food processor! Do you have one? What is it and what do you like/dislike about it??

For dinner Monday and Tuesday we had/are having Greek Chicken bowls. I made this Tzatziki sauce to go with it and it turned out super yummy! I didn’t put mint in ours because I’m not a huge mint fan, but I followed the rest of recipe! Let me know if you try it!

Here are the chicken bowls. They are super simple! I cooked chicken in olive oil, garlic, red pepper flakes, and oregano, then we put onion, tomatoes, quinoa, kimchi, and the Tzatziki sauce into a bowl. That’s it!

And some watermelon for dessert after! SO. GOOD. It’s always a crapshoot buying pre-cut fruit/veggies at the grocery store. You just never know how long they’ve been sitting there! But dang, this was delicious!

After dinner, we headed out for a little bike ride. I totally didn’t fix my shirt (remember, it was inside out?). I obviously didn’t care about it that much…

I forgot that I was taking before and after pictures (it was one of those days), so things are hidden, but it feels so nice to have meal prep finished for the week. I’ve found that if I can dedicate 3-4 hours to prepping, my entire week seems to go by a million times smoother.

Also, see that lunch box? That’s what I’ve been sending to work with Jake. Hahaha! Every time he leaves with it I giggle. So masculine.

Jake has different work hours during the summer and has to leave the house between 6:30/6:40. So, we get up about 3:50 now. Once we get used to it, I LOVE it. I run so much better early in the mornings and I am WAY more productive in the AM, too. So, it was up at 3:50 to get our run in! It’s kind of hard to tell in this picture, but I got a weird tan line on my knee when we were paddle boarding. That spot on my knee that is white and looks like a triangle. I noticed it while I was stretching this morning and it made me laugh.

I walked into our workout closet and realized I hadn’t worn my Rock’n’Roll race shirt yet, so I wore it this morning. It’s a thicker shirt, so I got hot after about a mile and a half and had to take it off. But it’s pretty cute!

Lu woke up right as we were about to leave and she needed some cuddles. She sleeps under our bed, so we never know when she’s going to grace us with her presence. Aspen stayed asleep until we got back from our run. I don’t think they like our 3:50AM alarm clocks…

Jake and I got almost 6 miles in. It was an absolutely gorgeous morning. Jake’s riding after work and I’m going to try to get to yoga. I’ll be in front of my computer for the rest of the day, so I’m going to need something to look forward to! I will take a short break every hour and then I’ll mow around lunch time. I seem to knock out the most work when I work on a schedule like that. I’m almost there, friends!

Oh, and married life is the BEST THING EVER. Or maybe it’s just Jake that’s the best, but whatever it is, I’m feeling very thankful! <3
