Post treadmill run crazy hair yesterday. I’m still a little bummed I didn’t get to run outside yesterday since it didn’t end up storming like it was supposed to, but I’ve got my fingers crossed for Thursday’s run!
After my run I came home and made a quick breakfast – two eggs, bacon, and sautéed mushrooms, onions, spinach, and tomatoes. All topped with nutritional yeast and Sriracha, of course!
After breakfast, I packed up all my stuff and headed to the library. I always treat myself to an almond milk latte when I work at the library. A little bribery goes a long way! I spent about 3ish hours there working. I got a lot finished, but I’m planning to spend even longer there on Thursday.
Food was the main reason I left. I forgot a snack, so I bought this vegan cookie from the coffee shop in the library. It was delicious, but I needed lunch. I’ll take lunch with me on Thursday when I go.
Thankfully my lunch was already made, all I had to do was heat it up. I was SO hungry. I threw it all in a tortilla and chowed down.

I picked up more hummus – I cannot stop eating that Thai Coconut Curry hummus by Hope Foods. It’s incredible.
Guys, you gotta try this! For dinner last night we had Sweet Potato Chicken Poppers (
THIS recipe). Holy cow they were good! I highly recommend them. This recipe is Paleo and Whole30 compliant, too. I also made my favorite brussels sprouts recipe – the one with honey and balsamic. YUM.
This is my all-time favorite soap from Bath and Body Works. I use the lotion, too. This scent is only out during Christmas time, so I always stock up. I think I bought 8 bottles of both this year…this is my last one! So sad.
Here’s another song I love! I listened to a mellow playlist while I took an Epsom Salt soak last night and this came on.
I’ve got more edits to do today. I’m working on Chapter 4, which needed a lot of work, so I’m hoping to have it wrapped up and ready to go at the end of this week. I think what makes the editing process so difficult is that people want different things from me. I think that’s part of the PhD process, though. I have to be able to make an argument for why I did something a certain way. I wrote my chapters and then didn’t really read through them again in their entirety. I was just so happy to be finished writing. I have been able to make them flow a lot better and fix some word choice things as I’ve been slowly reading through them, so that’s a positive! I’ve also had a couple “what in the world were you thinking here” moments. HA!
About to get technical on ya: I posted this on my Facebook, but if anyone is a Word wiz, PLEASE let me know! I’m trying to format headings and once I get to Level 3 (I’m using APA), the heading format applies to the entire paragraph since there’s no line break between the heading and the paragraph. I spent almost 4 hours trying to fix it yesterday and got SUPER cranky. I’m wondering if I’ll have to just
manually add any Level 3 headings to my Table of Contents. That’s not a huge deal, other than it’s one more thing to do and everything else will be hyperlinked from my Table of Contents. Soooo, if you have any ideas on how I can fix that, I will love you forever!
I’m going to get a little HIIT Circuit in later today – I’ll share the workout with you!

You should be able to just select the paragraph and change the style from Heading 3 to normal or body text (or whatever you’re using for your regular text). If all else fails you could insert a continuous section break, but just make sure that doesn’t mess with your chapters, other sections, etc. I would definitely avoid adding anything manually to your table of contents because it can cause problems later on and then you can’t automatically update it. Good luck!
