I’m sorry this is so small, I couldn’t make it any bigger. I cannot stop laughing. This is just a little glimpse into what life is like with my Momma. Never a dull moment! My sister and I tease her pretty relentlessly, but it’s completely out of love. She is pretty wonderful! And obviously she provides us with LOTS of laughs!

Breakfast on Monday was a massive egg and veggie scramble, turkey bacon, and toast with butter and honey. It was delicious.

Then we got to work! I worked from bed from 8AM to 2PM. I didn’t hate it! But I 100% got a ton finished. I can’t do that every day, but yesterday it definitely worked for me. Aspen’s many sleeping positions for the day…


Around 11 I prepped this beautiful sheet of veggies for my lunches this week. My current obsession is tri-colored carrots with any other veggie. This week, it’s cauliflower and butternut squash. Mmmm. I topped all of these with ghee, paprika, a little salt, and some Everything But The Bagel Seasoning from Trader Joe’s.

I finished up some chicken we had in our fridge, too.

Then it was back to the bedroom to finish up our To-Do list for the day. The girls’ To-Do lists always involve a lot of sleeping. Mine involve edits. All. The. Edits. Also, if anyone uses APA for paper formatting, can you relate to these feelings? I want to rip my APA manual in half and burn it. I’m currently working on tense throughout my entire paper…and there is a rule for EVERYTHING. It’s crazy. I see why it takes people so long to finish a doctoral program. I just finished year 4 and I went full-time while teaching full-time. I’d never be where I am today if I hadn’t resigned from my full-time job last May to focus only on finishing this dang thing.

Once I finished up my computer work for the day, I headed to the Y to get some lifting in. I’m wanting to lift 2-3 days a week during this training cycle. Some days it’ll be with weights and some days I’ll use my body weight. I’m just going to listen to my body! I’m shooting to lift weights Mondays and Wednesdays, then just do body weight stuff on Fridays, since my long runs are Saturday. I know that schedule might not always work, but that’s what I’m shooting for for right now.

I went to hot yoga right after the Y, so I took a little protein shake to drink in-between. Monday will also be my yoga day – or my rest day. It will depend on how the previous week of training went. As much as I hate rest days, I’m going to take them whenever I feel like I need one!

I came home from yoga to our girls playing in their new pool! Jake set all of this up for them on Father’s Day after I told him I was going to buy them a pool. HA! We had an old sandbox lying around, so Jake cleaned it up for the girls! Lulu LOVES it. She just stands in it. Or pushes her tennis ball down to the bottom and tries to catch it as it floats up.

This is one happy girl!

Sweet potato steak nachos for dinner! I shared this recipe awhile ago under Eats and it’s also HERE. It’s one of our favorite Paleo dishes. I put some dairy-free cheese on top.

I also made brussels sprouts to go with the nachos. Mmm.

After dinner, we each had THESE cookies. They’re DELICIOUS. A company called Immaculate makes them. I could’ve sworn the package said dairy-free( (they’re also gluten-free, for anyone with a gluten sensitivity!), but I can’t find it anywhere. Anyway, they’re super good!

Jake and I watched the slideshow from our wedding reception last night. I love
it! I’ll see if I can find a way to share it with you. It has some pretty funny pictures! We also watched a couple episodes of The Ranch. It was nice to relax!We are going to a new place a little out of town tonight, I’ll share all about it tomorrow!
