Happy Monday, everyone! I hope you had a wonderful weekend. We had a pretty relaxing one, which was SO nice. Let’s get caught up!
I hate to break it to ya, but this breakfast will be around again all this week, minus the bacon. I’m going meat free this week! Stay tuned to see how it goes…I enjoyed this plate of goodness Friday morning.
I ordered some new Nuun flavors, so I was pumped to find them on my front porch.
This is Jake and me in the mornings. I NEVER want to get up…I’ve been really struggling lately, too. More than usual.
I knocked out some computer work Friday morning, then I headed out for a little bike ride. I listened to Dashboard radio while I rode. Do you ever feel like listening ONLY to a certain genre or song, or you just don’t know what you want to listen to? I’ve been in a music funk lately. Nothing sounds good to listen to during my runs – which I hate! I love almost all music, so I can typically always find something to listen to, but lately I’ve been struggling. I did two of my longer runs last week without music! I never do that. It was kind of overcast on Friday when I left for my ride and I just wanted it to be relaxing, so Dashboard radio was perfect.
I came home from my 13 mile ride and did this HIIT Tabata workout again.
Then it was lunch time.
Lu napped pretty hard. She woke up not knowing what day it was. Her face cracked me up.
I had a couple of meetings Friday afternoon, so that took up the rest of my day. We met Jake’s parents at Galloway for dinner Friday night. I had the BLT, which is one of my favorites. It’s just SO good.
We saw these flowers on a tree as we were leaving. Aren’t they beautiful?? Someone told me they’re from a tree called a Mimosa Tree.
Saturday morning, Jake and I did the Recycle Run, which Bass Pro put on here in town. It was just a fun run for anyone to do. The run itself was 6 miles, but Jake wanted 15, so he ran from our house and met me at Bass Pro. While I waited for him to get there, I did some glute activating moves (leg swings). I’ve been trying to do this kind of stuff before my runs in the AM. I think I mentioned this awhile ago, but Jake has another hundred coming up this fall!
It got HOT, but we had fun running with everyone!
After the run, we came home and chowed down on bowls of eggs, veggies, and chicken. It was delicious.
I checked in on our neighbor’s adorable cat, then I headed to a TRX class. I’m allergic to cats, but I couldn’t resist giving him some love. <3 He was not happy, poor guy misses his Mom.
RX Bars had a huge sale the other day, so we stocked up! I’m pumped.
My parents were packing up their garage sale, so Jake and I picked up sandwiches from Mama Jean’s and took them lunch. They have a sandwich called The Firebird and it’s our favorite. It has Sriracha on it!
I saw this somewhere Saturday afternoon!! A pineapple!
We went to Cesar’s Saturday night with our friend, Kallie. I had a taco salad and it was incredible. I’ll definitely get it again. I pulled the cheese and sour cream off, and substituted the shredded chicken for the al pastor, which is chicken and pineapple. So. Delicious.
Then the three of us headed to Creekside to celebrate it’s last night. Bear, the owner, had a private party for regulars and it was a blast. We are SO sad it’s closing, but we loved getting to be there Saturday night.

To end the evening, Bear, the owner, sang a song. It was amazing. We love you, Bear!
Jake and I both had planned to get up at 5 to start our runs by 6, but our alarms went off and it just felt SO good to lay in bed. We had an easy 7-miles for the day, so we knew we could get it in later. Soooo, we lounged in bed and started on some meal prep instead of running. About the time we considered starting our run, it started POURING.
So, we headed to breakfast instead!
After breakfast, we got to work around the house. Jake worked on my car and I went to the grocery store. We met my parents for lunch at Brew Co – I had the cod sliders (minus buns) and sweet potato fries.
We got home from lunch and knocked out a little more around the house before we headed out for our run. I worked really hard yesterday to run SLOW. I was worried about running a 9:45 ish pace, which is the fastest I should be running my aerobic runs. I was maybe going to shoot for 9:30ish, just because I didn’t really want to be out running for that long, especially since we put our runs off until later afternoon, but I ended up NEEDING a slower aerobic run, so it worked out well! We got 7 in around a 10 minute pace. I’m working really hard this training cycle to keep my easy runs EASY. My watch didn’t love that I ran so slow…
It was a little sunny…HA!
I found a recipe in Run Fast. Eat Slow. called Ginger-Molasses Bread and it sounded so good! It called for Spelt Flour, which I’ve never used before, so I was excited to make it.
Here it is! I haven’t tried it yet, but Jake said it’s delicious. The dough was incredible, so I’m sure it’s going to taste amazing. It has raisins in it, too.
The BEST husband. He not only replaced my brake pads, but he also rotated my tires. <3
Jake and I had Galloway for dinner Sunday night. I had wings. Mmmm.

We had a wonderful weekend, and now it’s back to the grind. I have a ton of edits to knock out this week – this is the FINAL round, friends. I can’t believe it. The head of my committee and I are starting with Chapter 1 and making sure everything is ready to go. I asked her if we could do it this way because it’s easier to read everything in order and edit from there. I have TWO months until I defend. I’ll have to make some revisions after my defense (banking on passing my defense…), but then I submit everything and I’m FINISHED. At least that is the plan as of now – it’s crunch time! I will get a lifting workout in sometime today, too. Tomorrow is my Momma’s birthday, so I really want to get to the pool to spend some time with her. I’m going to try and knock out a bunch of stuff today, so I have a few hours to go to the pool tomorrow!

Which full marathon are you training for again? I think it’d be an AWESOME idea to share your training cycle. Do you think that your focus will go to running mainly once you graduate? OR to you have a plan for what comes next??

Do you think you will go back into teaching? I mean with a Ph.D. Couldn’t you get a professorship at a local university? I guess I haven’t looked into what you’d do with a non medical doctorate degree. lol!
Sounds like an AWESOME marathon … I just looked it up and it looks like it’s close to home which is even better! I would love to consider that race if it’s a marathon as meeting you is definitely a goal. Haha!
