Weekend Wrap-up!

Friday started out with a little computer stuff, then this delicious breakfast burrito. I’ve loved having this dairy-free cheese. It’s SO good. I can’t remember the brand, but I’ll share it next time I buy some.

I officially made it two weeks without eating meat (minus having fish twice, which I don’t consider meat, but thought I’d throw that out there). I feel really good and haven’t had any cravings, which kind of surprised me. I thought I’d crave bacon or a burger. I’m sure I will at some point! I’m just doing this to see how I feel and how it affects my training. So far, I’m feeling really good. I’m worried about getting enough protein, so I’ll play around with that a little, too. I’m tracking macros for a little bit, just to see if I can find a good balance.

Most of my interview data! I pulled all of it out on Friday and worked on a couple of things. For new readers, I conducted interviews for my dissertation – I interviewed 12 participants 3 times. I’m studying how undergraduate pre-service teachers perceive community in their online courses. I picked this topic because community is so important in education, and as online learning continues to gain popularity, I think we need to be aware of the community piece and how to better establish it in online courses. My participants were SO fun to interview and they had some amazing things to say.

Lunch was leftovers. This eggplant and mushroom wild rice is SO delicious. I replaced the wild rice with quinoa, but this is a meal we will have to make again!

This is my current favorite snack. Can you tell? BUT, I’m out of dried mango and the store didn’t have any either. I’m bummed.

I don’t know what I was doing (probably sitting at the computer), but I don’t remember the last time my heart rate was 39…

Poor Jake worked until pretty late Friday night, so I pulled the lazy card and made blueberry pancakes for myself for dinner. They were delicious. I like my pancakes still doughy on the inside…anyone else??

I couldn’t decide what I wanted, so I topped two with PB and two with butter. Then slathered syrup on top of everything! I used Kodiak Cakes pancake mix. It’s SO delicious.

I had a meeting before dinner, so after I ate, I worked a little bit more. I finally opened up a bottle wine to help with that fact that I was working on my dissertation on a Friday night.

Jake got home from working around 8:30 and we took the girls to get Andy’s. Aspen literally inhaled her ice cream cone…it was hilarious. It was there for the first picture and when I took the second, maybe 2 seconds later, the whole cone was gone.

This is my favorite thing to get at Andy’s. A kid’s sundae with cookie dough bites. I also wanted PB cups, so they gave them to me on the side. The cookie dough bites were way better. I’ll stick with what I usually get. This is one dairy item I won’t give up! I love ice cream. We don’t have it all that often, but when we do, I enjoy it!

Saturday morning started with some time in bed, sipping coffee, before we got ready to run. As much as I loved lounging in bed with coffee, our run was HOTTTT. I had a piece of Dave’s Killer bread with butter and honey before we ran.

We ran errands Saturday, then we went to one of my favorite places – Nearly Famous!!! I had their egg salad sandwich, which is incredible. And their house salad, which I have literally had dreams about. It was the perfect lunch.

Jake wins husband of the year!!! I broke TWO blenders in June…it wasn’t my best month. I’ve also been wanting a food processor forever, so Jake got me a blender AND a food processor. I’m obsessed!

For dinner Saturday night, we made pizza! We used this sourdough crust and it was incredible. I got it at Lucky’s.

I made one of my favorite drinks – Deep Eddy’s and water. So yummy. My in-laws got me that pineapple cup – I LOVE it! <3

Here’s the finished product! It was delicious. I topped the crust with marinara, garlic, black pepper, red pepper flakes, tomato, mushrooms, onion, goat cheese (which doesn’t bother my stomach), jalapeños, arugula, and eggplant! It was yummy.

RIGHT as I finished putting things on plates, Jake got called into work. He scarfed down one piece of pizza, then hit the road. The girls and I relaxed and watched Gilmore Girls while he was gone working.

Jake got home pretty late, and I can never sleep when he’s out working, so we got to bed later than usual. We got up Sunday and headed out for long runs. Jake had to stay pretty close to the house, just in case he got called in, but I wanted to do a new route I made, which went around town. We ran about a mile together, then I headed off to do my new route.

It’s kind of hard to tell, but this hill is NOT fun. After that first little section of hill you can see, it gets brutal. This is where we do our hill workout runs. I had to run up this bad boy to follow my route. Woof. It never seems to get any easier!

I wore my pack, mostly because I like sticking my phone in the pocket of it. I have the VaporHowe by Nathan and I’m obsessed with it. It’s SO lightweight. I’ve never worn a pack that is this lightweight. If you’re in the market for a pack, I highly recommend this one! I’m not sponsored by them or anything, I just really love this one! I’m wearing a size small pack.
Oh. My. Gosh. So sweaty. At the end of my 10 miles, I was soaked.

Jake and I finished our runs about the same time, so I made us smoothies in my new amazing blender. They were INCREDIBLE. I’m going to love this new blender and food processor. It’s the bomb.

Since I wasn’t running that much at the beginning of the year, I was super far behind my goal of 1,000 miles. I’ve almost caught up to where I need to be!

We met my family for brunch at Civil. I was super bummed. I usually LOVE their food, but I was really disappointed in the Garden Eggs Benedict. It came out cold and the English muffin wasn’t even toasted. I was sad.

After brunch, I headed to the grocery store. I decided a Unita Lime Pilsner would help me shop. It did!

We are having fruit smoothies for breakfast this week, so I wanted some unflavored protein powder. I picked this up, so we will see what we think!

For lunch this week, Jake is having a Kalmata olive and potato chicken dish. I don’t like Kalmata olives, but this smelled amazing!

Dinner was the last of the leftovers! I was so proud of us. Nothing went to waste last week and we ate every single thing I had gotten at the grocery store. That doesn’t always happen, so it’s a good feeling when it does!

Jake worked for a few hours on a surprise for me, so I wasn’t allowed outside. He brought me out to show me this beautiful plant stand! He made the whole thing. I’ve been wanting one for our front porch. I LOVE IT. Isn’t it beautiful?? I can’t wait to get it all set up!

I have ALL the computer work today. It’s REALLY crunch time. I have about a month before everything needs to be submitted. GULP. My anxiety is pretty high today, but I think once I start knocking out this final round of edits, I’ll feel a lot better. I’m also teaching 3 online classes in the fall, so I need to start prepping for those…
