I am officially in LOVE with an appliance. Where has this Ninja blender been all my life?! It blends our smoothies SO fast. I’m impressed. This week we are having fruit and veggie smoothies. These bad boys are full of blueberries, half a banana, pea protein, spinach, collagen, MCT Oil, applesauce, and Flaxseed protein milk. Mmmm.

I literally worked on my computer ALL day. I’m not complaining, I’m just ready to be FINISHED. Every hour or so, my eyes would start to glaze over, so I would get up and do something. One of my projects was organizing our laundry room! I’m kicking myself for this…I totally forgot to take a before picture! You would’ve been shocked. I like to think of Jake and myself as pretty organized people, but we let this shelf get SO out of control. I think the blender falling and shattering a few weeks ago was the last straw. I organized the whole shelving unit, got rid of stuff, and just made it look a million times better. It’s not finished yet, but this at least doesn’t give me anxiety every time I look at it.

I got hungry way before lunch time, so I had some hummus and Nut Thins.

Between that snack and lunch, I rotated between computer work and cleaning. I got the whole house dusted and vacuumed. It’s sad when cleaning sounds like more fun than working on your dissertation. Actually, I guess that’s not sad. It’s just normal. Lunch was quinoa, roasted squash, beets, and carrots, and cherries.

After lunch, I went back to computer work and cleaning, then I took another snack break. When Jake got home from work around 4PM, I told him I felt like it was only noon. My day went by WAY too quickly.

Jake worked out in our shop on his truck for awhile after he got home. Lu was pretty sad she wasn’t out there with him.

Nuun just came out with some Immunity tablets and they’re awesome. This flavor is incredible.

Dinner was something totally new for me! I loved making this. We used tempeh for the first time, too! I got the recipe out of the Run Fast. Eat Slow cookbook. It’s tempeh, broccoli, mushrooms, garlic, red pepper flakes, fennel, and marinara, all on top of noodles! So delicious.
Picture

I really loved this! I think I’m going to try tempeh in a few other things. There were so many flavors in this dish, you didn’t really get to taste it. I used those Banza chickpea noodles that I shared HERE. They are super good!

Here’s the awesome planter Jake made me! I LOVE, LOVE, LOVE it! I can’t wait to get a plant for the top. We were thinking a fern – any ideas?? Also, we love to sit at this table after our runs in the AM while we sip coffee. It’s so relaxing.

I worked on dissertation edits until 8PM, then I went out into the shop to sit with Jake for a little bit. He set up the lounge chair for me. I think I could’ve fallen asleep out there. Jake came home from work and spent the evening working on his truck, moving some things around, cleaning the shop, and spraying for bugs. He’s like the energizer buddy! He didn’t even change out of his work clothes!

Welp, this morning I headed out for my FIRST workout run since my hamstring injury last summer. I was excited and nervous. It was an uphill/downhill workout. I put the workout into my watch, so I was excited to see what it would do. I also can’t function without coffee. I program our coffee to be finished when our alarms go off, so I think the only thing that get me out of bed at 4AM is the smell of coffee. <3
Picture

I also had a scoop of this. I’m a caffeine addict. I drink a ton of water, too! I don’t ever feel jittery or anything, so I don’t think I’m drinking too much caffeine.

Here’s the beginning part of my workout. I LOVE Garmin for this feature. You create the workout on Garmin Connect, then send it to your phone, which syncs to your device. It’s awesome! Your device then a
lerts you at each change in the workout. It even alerts you about pace! Love, love, love. This was my workout for the day:
3 mile warm-up, 6x200m (each) uphill at 10k pace and downhill at marathon pace with minute rest in-between, 2 mile cool-down.

How cool is this? My workouts are forever changed. Best feature ever.

Woof. It was a humid one, friends. My poor phone was foggy. I got 7 miles in for the day. They felt really good, despite this picture. ; )

I’ve got another date with my computer today, BUT, I also get to have a girls’ lunch with my Momma, and our friends, June and Adrienne! I can’t wait to squeeze them all! <3
Happy Tuesday, friends!
