Sometimes Lu has a hard time waking up in the mornings. She wanted me to feed her, but she also couldn’t hang. Her eyes were closed, but it’s hard to tell because she’s so scruffy. She needs a haircut SO bad.

I headed out for a 5-miler a little after 7AM. I was reminded why we run EARLY. I was so tempted to jump in the creek by our house…

Post-run stretching. This was the only picture without the girls attacking me.

Lunch was half of one of the broccoli and rice stuffed peppers I made. These turned out super yummy!

My afternoons are pretty much always the same – work and snack breaks.

I really wanted some chips yesterday. They were delicious.

Someone was all tuckered out from work. Jake can literally fall asleep anywhere. And he does. I’m so jealous. It takes me forever to fall asleep. Don’t worry, I showed this to him before I posted it. We had a good laugh.

I think I dropped a chip crumb. Lu would not stop crying and staring under the couch. I think she finally got it out yesterday evening.

Aspen always has her head hanging off whatever she is sleeping. I don’t see how that is comfortable.

Dinner last night was salmon in a puff pastry. I got ready to start making everything and realized I didn’t have any regular flour left, so I used almond flour. It was definitely a little challenging, but it ended up being amazing. I wasn’t quite sure how it would turn out at first…I posted all the steps on my Instastories. Here’s step 1 – make the dough.

This deliciousness went on top of the salmon once it was inside the pastry.

While the dough chilled in the fridge, I seasoned the salmon.

The recipe is supposed to feed 8 people, so I made it WAY smaller. Since the dough was super crumbly, I cut our salmon portions so they would fit into the pastry. I want to make this meal for a big group, though. I think it would turn out ever better.

Before baking…see how crumbly it was? Jake and I had to use teamwork to pick it up off the counter and transfer it to the baking sheet. This was definitely not a pretty meal (my fault), but it would be if I followed the directions…

It turned out DELICIOUS. Ready to be devoured!

My friend, Katie, was giving me a hard time about never posting pictures of food before I dumped Sriracha on them, so this first picture is for her! I’m going to make this again this week since we planned to have it twice, but I’m going to get some regular flour and see which one we like better. Stay tuned!


These three sleepy babies did not want to get up this morning. Jake even has his running shoes on!

I headed to the track to knock out a workout!

I got 8 miles in for track Tuesday. 3 mile warm-up, 4x1k at 10k pace with 2 minute rest in-between, 2 mile cool-down. I loved this workout!

I’m off to the library for the day! I’m ready to knock out some work.
