Monday morning started with a track workout. I texted Jyssica at 9 PM on Sunday evening, telling her I’d be at the track a little before 5 AM Monday morning. Her response, “See ya there!” Ha! We both ran from our houses and did our own 3 mile warm-up and we got to the track about the same time! We each did our own workouts at the track, too, but it was nice seeing each other every few laps. Jyss did 400s and stairs – she has a race in Colorado coming up, so she has been training for that. I did 6 x 1k at 7:50 pace with 2 min jog in-between. (Ik = .62, so a little over a half mile). We both finished our workouts about the same time, so we did half of our 2 mile cool-downs together. We finished with a little over 9 miles to start the day!

Then it was back home and time for a smoothie.

I worked on the computer a little yesterday morning. I was having trouble concentrating, so I took a break to dust and vacuum our house. After I cleaned, I realized it was lunch time. I had an egg and veggie wrap with dairy-free cheese and some of my homemade roasted red pepper hummus.

Plus some sweet potato chips, which I made in the AirFryer.

My Mom sent some Monster Cookies home with us. I, of course, chose the biggest one to have after lunch yesterday. They’re SO good. The recipe is from my great grandmother on my Dad’s side. I’ve been inhaling these cookies my entire life. <3

I ended up going through my closet yesterday and getting rid of some clothes. I was having a hard time working on my dissertation, and I’ve learned not to force it unless I’m on a tight deadline. When I’m on a deadline, I don’t have an option, but my writing is never very good when I force it. I always end up going back and changing everything I did. So, I knocked out some other stuff I’ve been wanting to do. I also took another snack break and had some Nut Thins. I can’t decide if this flavor or the Country Ranch is my favorite – they’re both SO delicious. These are just about the only crackers we buy. Sometimes I’ll branch out and get others, but these are a staple in our house.

Oh my gosh – exciting news!!! I’ve been wanting to do a food sensitivity test for awhile. I researched a bunch of different kinds and EverlyWell seemed to be the best for what I was wanting. I’m SO pumped to team up with them to show you what one of their tests entails. I will also have a discount code to share for my blog readers! They have ALL kinds of different tests, too, not just food sensitivity ones. I’m going to do a step-by-step video on Instagram, and I’ll also try to upload the videos to Papers & Pavement’s Facebook page. I’ll let you know when all of this is going down.

I met Jake after work yesterday, but I was kind of hungry when I left the house, so I took a Kind Bar with me. I love these bars, but had forgotten about them. I saw them at Lucky’s the other day, so I grabbed a bunch. They’re so easy to grab and take on the go.

Dinner last night was a one pan meal, which I love. I clean while I cook because I don’t like messes, so one pan meals are perfect for my Type A personality. It was also super simple to throw together! All you need is asparagus (I cooked the whole bunch I got from the store), salmon, 2 lemons, butter, garlic, and parsley. That’s it! I added my favorite Primal Palate seafood seasoning to the salmon and black pepper to everything, but this recipe is easy! You mix the 2T butter, juice from one lemon, and 1/2T parsley together, spray the pan, put the asparagus and salmon on sprayed pan, top with butter mixture (and anything else you’d like), cut up second lemon, place pieces throughout pan, cook for 12 minutes at 450. Boom. That’s it!

I also made a roasted pine nut couscous, so we had that with our fish and veggies. Mmm. I forgot to take a Sriracha picture. I was too hungry!

After dinner, we needed something sweet. I got these sour gummy worms from Lucky’s for my sister’s bridal lunch, so we snacked on a few of them while we watched an episode of Gilmore Girls.

Now it’s time to get some work finished! I feel like I’ll be able to concentrate better today. I’m going to try out my new TRX straps for my workout later. I can’t wait! TRX is one of my favorite workouts.
