Weekend Wrap-up + GIVEAWAY WINNER!

We had a wonderful weekend doing some of our favorite things. We still haven’t heard about Aspen’s last lab test, so I will be calling the vet today. It shouldn’t take this long to find out. She seemed to feel a little better Friday evening and Saturday morning, but she is definitely not herself. If I can watch her closely, she doesn’t have to wear her cone. She just keeps messing with the lumps on her body and making them bleed. She doesn’t love wearing the cone, but she doesn’t seem to hate it. But, if I can watch her and keep her from wearing it, I’m going to try!

Friday morning I had a smoothie for breakfast, knocked out a little work, cuddled with Aspen, then took a lunch break. I had roasted veggies, black beans, meatless sausage (I used Light Life foods and it is delicious), and 1/3 of a sweet potato with a slice of dairy-free mozzarella. This plate of deliciousness was yummy and filling.

I was on my computer most of the day. I got a little bit accomplished, but not as much as I was wanting to – I’m going to call last week kind of a wash for work. THIS week is going to be GREAT. I can just feel it.

Also, if you haven’t had these, they’re DELICIOUS. Seriously so yummy.

Aspen loves to cuddle and her favorite thing to do it put her head in-between your legs or in-between your arm and your body. I think it makes her feel safe. She couldn’t do that with her cone on, so I think she’s making up for it now while her cone is off. She wants to do this ALL the time. I let her! <3 She is seriously the sweetest dog I’ve ever met. She just wants to love on you.

Jake and I went out for dinner Friday night, but he realized he left his phone at home, so we turned around to grab it. When we got onto our street, there was a deer walking down the middle of it! No joke!

We went to Brew Co for dinner. They changed up their menu and their new stuff is awesome. I had a flat bread pizza with light cheese. It was incredible. I ate the entire thing…also, if something has a balsamic drizzle on it, I want it.

After dinner, we headed to Mother’s for a movie night. They set up this huge screen for everyone. We watched Dirty Dancing and had a blast. I love that movie. I think it’s one of my favorites.

I had a 15 mile run Saturday morning. I made a route to use, but when I woke up, I had a weird feeling about running it by myself. So, I just did an out and back through town! Does anyone else ever do that? I’m big on following my instincts, so if I get a weird feeling about something, I won’t do it. I’m sure nothing would’ve happened, but better safe than sorry, right?

My run was HARD. I had 6 miles at an easy pace, 7 at my marathon pace, and then 2 miles easy to finish. I had a lot of trouble keeping the 7 in the middle at marathon pace. I got the mileage in and ended up with an overall pace that was close to what I wanted, but I definitely struggled. My legs and feet were killing me throughout the whole run, which was strange. I got home, sat down on our driveway and realized I accidentally wore my old shoes. UGH. Eye-roll. That would explain why things were hurting.

These shoes are pretty worn out. I think it’s time to get them out of the garage so that doesn’t happen again.

The weather was perfect on Saturday morning. It was overcast for my whole run and never got super hot. I loved it.

These things are my favorite recovery! I mix them with a little flaxseed milk and chug. So. Delicious.

After I drank my recovery shake, I made a breakfast burrito with meatless sausage, black beans, spinach, and eggs. It hit the spot.

Aspen had to keep her cone on while I was out running because Jake was gone running trail. She was so excited when I came home and took it off of her. Jake knocked out 20 at a crazy fast pace on some trail. He amazes me every single day.

Jake and I relaxed around the house for a little bit after our runs. I took an Epsom salt bath, (which I absolutely swear by, I think they’re playing a huge role in keeping me healthy), then we headed to Galloway for lunch. I wanted a salad and French fries, so that’s what I had! I’m not usually a big fry person, but they sounded SO good.

Jake and I ran some errands, then we went to Kayla’s house to see her parents who were in town for the weekend. We love them! We love Kayla, too, I guess. ; ) Kayla’s Dad, Fred, has been training his puppies, so he showed us what they have been working on. It was SO cool. Dogs are so smart.

We headed to Cesar’s Old Mexico for dinner Saturday night. It it one of our all-time favorite places here in town. So. Dang. Good. Good enough to make someone who doesn’t eat a lot of dairy eat some queso. YUM.

They also made something special for me! They have this homemade pupusa that I LOVE, but, it is made with pork. Since I’m not eating meat, I begged them to make it with shrimp. They did and it was the best thing I’ve ever had. <3 <3

They also have the best sangria I’ve ever had. In my whole life. See why we are so obsessed with it?? If you’re close to Springfield, go eat there! And get the sangria and let me know what you think. Or just invite me to go with you! ; )

Sunday morning, Jake went fishing super early. I slept in a little then headed to the grocery store. When I got home, I made breakfast for us – pancakes and eggs. Jake was only mildly disappointed that we didn’t have bacon…I should’ve taken a picture of his plate. I gave him the pretty pancakes. Both of mine got a little lopsided when I flipped them.

On Saturday, I told Jake that I wanted to be lazy on Sunday, so that’s what we did! We sat on the couch and watched Gilmore Girls for a few hours. It was so nice. I had leftovers from Galloway for lunch, then we headed out to drive around and go to some open houses. We love looking at houses, so we had a blast walking through some of them.

I was pretty excited about how cute my Nalgenes looked together. Jake just shook his head at me and walk away. I think he was jealous. ; )

We went to dinner with my parents last night at Thai Peppers. I had never been there before! It was outstanding. I had the sweet and sour tofu and LOVED it.

Tuesday: TRX lifting circuit
Wednesday: 2 easy, 4 half marathon pace, 1 easy = 7 @8:24
Thursday: 20 minutes on the elliptical and abs
Friday: 4 easy = 4 @9:19
Saturday: 6 easy, 7 marathon pace, 2 easy = 15 @ 9:02

    I 100% trust my gut and the second something feels off, I’m out! I am so glad you are the same way. I feel very safe out running but we do need to be cautious and aware. Have you heard of Run Angel? I am thinking of getting it.

      I’m so glad to hear that – thank you!! I feel safe running, too, but sometimes I get a weird feeling. Always trust our guts! : )
      I’ve heard about the Run Angel, but I haven’t researched it very much. I’m going to look into it! Thank you for the recommendation!
